For a summer-ready pasta salad that pairs well with any grilling menu or for a quick potluck pleaser, try this 30-minute pasta. It gets a head start with Suddenly Salad and goes Greek with feta, olives and tomatoes.

1 box Betty Crocker™ Suddenly Salad® classic pasta salad mix
Water and oil called for on salad mix box
4 cups torn romaine lettuce
2 medium tomatoes, coarsely chopped (1 1/2 cups)
1 small cucumber, coarsely chopped (1 cup)
1/2 cup thinly sliced red onion, slices cut in half
1 can (2 1/4 oz) sliced ripe olives, drained
4 oz crumbled feta cheese (1 cup)

Steps:

  • Make pasta as directed on box.
  • In large bowl, stir together seasoning mix, water and oil. Stir in pasta and remaining ingredients except cheese. Sprinkle with cheese. Serve immediately, or refrigerate.

Number Of Ingredients 8

3 cups uncooked whole wheat spiral pasta (about 7 ounces)
3/4 pound Italian turkey sausage links, casings removed
2 garlic cloves, minced
4 ounces fresh baby spinach (about 5 cups)
1/2 cup pitted Greek olives, halved
1/3 cup julienned oil-packed sun-dried tomatoes, drained and chopped
1/4 cup crumbled feta cheese
Lemon wedges, optional

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions; drain and return to pot. , Meanwhile, in a large skillet, cook and coarsely crumble sausage over medium-high heat until no longer pink, 4-6 minutes. Add garlic; cook and stir 1 minute. Add to pasta., Stir in spinach, olives and tomatoes; heat through, allowing spinach to wilt slightly. Stir in cheese. If desired, serve with lemon wedges.

I found this online and thought it looked simple and tasty (and different from the average spaghetti).

Number Of Ingredients 10

1 1/2 lbs tomatoes, seeded and cut into 1/2-inch pieces
1/2 cup kalamata olives or 1/2 cup other black olives, pitted
1/4 lb feta cheese, crumbled
3 tablespoons capers, drained
3 tablespoons flat leaf parsley, chopped
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3/4 lb spaghetti
6 tablespoons olive oil
3 garlic cloves, minced

Steps:

  • In a large bowl, combine the tomatoes, olives, feta, capers, parsley, salt, and pepper.
  • Cook spaghetti according to package directions and drain.
  • Meanwhile, in a medium frying pan, heat the olive oil over moderately low heat. Add the garlic and cook, stirring, for 1 minute.
  • Add the cooked pasta and the garlic oil to the tomato mixture and toss.

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.
