1/3 cup lemon juice
2 tablespoons olive oil
4 teaspoons grated lemon zest
3 garlic cloves, minced, divided
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds mahi mahi
1-1/2 cups shredded red cabbage
1/2 medium red onion, thinly sliced
1/2 medium sweet red pepper, julienned
1/2 cup crumbled feta cheese
6 tablespoons chopped pitted Greek olives, divided
1/4 cup minced fresh parsley
1-1/2 cups plain Greek yogurt
1/2 medium English cucumber, cut into 1-inch pieces
1 teaspoon dill weed
1/2 teaspoon ground coriander
12 whole wheat tortillas (8 inches), warmed

Steps:

  • In a large resealable plastic bag, combine the lemon juice, oil, lemon zest, 2 garlic cloves, oregano, salt and pepper. Add the mahi mahi; seal bag and turn to coat. Refrigerate for up to 30 minutes., In a large bowl, combine the cabbage, onion, red pepper, cheese, 3 tablespoons olives and parsley; set aside., Place the yogurt, cucumber, dill, coriander and remaining garlic and olives in a food processor; cover and process until blended., Drain fish and discard marinade. Lightly oil the grill rack. 1 tbsp olive oil
½ cup red onion (diced)
4 cloves garlic (minced)
1 lb ground turkey
1 tbsp fresh oregano (or 1 tsp dried oregano)
1 tsp black pepper
½ tsp kosher salt
½ cup sun dried tomatoes
6 pita breads
½ cup feta cheese crumbles
1 tbsp fresh mint (chopped)
1 lemon (sliced into 6 wedges)
½ cup tzatziki sauce
1 cup cherry tomatoes (quartered)
½ cup red onion (diced)
1 cup cucumber (diced)
1 tbsp olive oil
1 tbsp lemon juice
2 tbsp red wine vinegar
1 tsp fresh oregano (or ½ tsp dried oregano)
½ tsp black pepper
½ tsp kosher salt

Steps:

  • In a large bowl, combine the cherry tomatoes, red onion and cucumber.
  • In a small bowl whisk the olive oil, red wine vinegar, lemon juice, oregano, black pepper and kosher salt together.
  • Pour this mixture over the tomato cucumber salsa and toss to combine. Set aside.
  • Add the olive oil to a large skillet over medium-high heat.
  • Add the onions, saute for 4-5 minutes, add the garlic, saute 1 minute, then add the ground turkey.
  • Cook the turkey through, drain any grease, then add the oregano, black pepper, kosher salt and the sun dried tomatoes.
  • Simmer on low for 5 minutes.
  • Warm the pita bread in a dry skillet over medium heat for 30-60 seconds on each side.
  • Add the cooked ground turkey to the pita bread, top with the cucumber tomato salsa, feta cheese, fresh mint and tzatziki sauce.
  • Serve with lemon wedges on the side for squeezing over the tacos.
