Time 5m

Yield 8 oz, 8 serving(s)

Number Of Ingredients 7

1 (2/3 ounce) packet of good seasons Italian salad dressing mix
1/4 cup red wine vinegar
3 tablespoons water
1/4 cup olive oil
1/4 cup vegetable oil
1/4 cup crumbled feta cheese (may use low fat or fat free with great results)
2 tablespoons chopped kalamata olives

Steps:

  • Whisk together all ingredients.
  • Serve atop greens as a salad or use as a marinade for chicken or shrimp.

Tips:

  • Use a good quality olive oil. The better the olive oil, the better the dressing will taste.
  • Freshly squeezed lemon juice is always best. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will be less bright.
  • Add a little bit of honey or sugar to balance out the acidity of the lemon juice. You can also use a balsamic vinegar reduction.
  • Season the dressing with salt and pepper to taste. You can also add other herbs and spices, such as oregano, thyme, or rosemary.
  • Let the dressing sit for at least 30 minutes before using it. This will allow the flavors to meld together.
  • Use the dressing on salads, grilled vegetables, or fish. You can also use it as a marinade for chicken or beef.

Conclusion:

Greek vinaigrette is a versatile and flavorful dressing that can be used on a variety of dishes. It's easy to make and can be tailored to your own taste preferences. With a few simple ingredients, you can create a delicious and healthy dressing that will brighten up any meal.
