Tips:

  • Use a sharp knife to thinly slice the green apple and jicama. This will help the salad to be more crisp and refreshing.
  • Do not overcook the prawns. They should be cooked just until they are opaque and pink, otherwise they will become tough. You can also use pre-cooked prawns for convenience.
  • Make sure the mint and lemongrass are finely chopped. This will help to release their flavors into the dressing.
  • Taste the dressing before adding it to the salad. Adjust the seasonings to your liking.
  • Serve the salad immediately. This is best enjoyed fresh.

Conclusion:

This green apple, jicama, and prawn salad with mint, lemongrass, and Dijon dressing is a healthy and refreshing dish that is perfect for a summer lunch or dinner. The combination of sweet, sour, and savory flavors is sure to please everyone at the table. This salad is also very easy to make, and it can be prepared in just a few minutes.
