This variation of classic French green bean amandine includes roasted garlic and blue cheese for an extra kick.

3 heads garlic, minced
1 tablespoon olive oil
salt and freshly ground pepper to taste
1 pound fresh green beans, trimmed
1 teaspoon butter
⅓ cup sliced almonds
1 tablespoon olive oil
1 pinch cayenne pepper, or more to taste
2 ounces crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
  • Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
  • Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
  • Increase oven temperature to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
  • Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
  • Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7

The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

1/2-1 teaspoon Dijon mustard
2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil
1 1/2 cups sliced almonds, toasted
2 lbs fresh green beans, ends trimmed
1/2-3/4 cup blue cheese, crumbled (or to taste)
salt and black pepper

Steps:

  • In a small bowl whisk together mustard, vinegar, shallot and oil.
  • Prepare a bowl with ice water.
  • In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
  • Remove the beans to a bowl and dry well patting with paper towels.
  • Drizzle the dressing over the beans; toss to combine.
  • Season with black pepper and a pinch of salt.
  • Add in blue cheese and almonds; toss to combine.
  • Transfer to a serving plate or bowl, and sprinkle with more sliced toasted almonds.
  • Serve at room temperature.
