Add the green beans and cook for 3-4 minutes, or until they are tender-crisp. Immediately remove the beans from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
  • Make the sauce: The sauce for green bean gratin is typically made with a combination of butter, flour, milk, and cheese. You can also add other ingredients, such as garlic, onion, or mushrooms.
  • Assemble the gratin: Layer the blanched green beans in a baking dish. Pour the sauce over the beans and sprinkle with grated cheese. You can also add bread crumbs or chopped nuts for a crunchy topping.
  • Bake the gratin: Bake the gratin in a preheated oven until the cheese is melted and bubbly and the beans are tender. This usually takes about 20-30 minutes.
  • Serve the gratin: Green bean gratin is best served hot, out of the oven. It can be served as a main course or a side dish.
