3 pounds green beans, trimmed of stem end
1/2 cup skin on sliced almonds
3 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
2 large onions, sliced thin
2 tablespoons chopped fresh thyme leaves
Freshly ground black pepper

Steps:

  • Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.
  • Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

1/3 cup walnuts, chopped and toasted

Steps:

  • Preheat oven to 450 degrees. Line rimmed baking sheet with aluminum foil. Spread beans and onions on baking sheet. Drizzle with olive oil. Coat evenly. Sprinkle with 1/2 teaspoon of salt, toss to coat and distribute in an even layer. Roast for 10 minutes.

8 slices bacon, cooked crisp and drained
pepper
1 onion, chopped
4 tablespoons butter

2 -4 tablespoons bacon butter pan drippings
1 tablespoon good balsamic vinegar, divided
2 tablespoons butter

Steps:

  • Fry bacon in pan til done sprinkling both sides as it cooks with coarse ground pepper.
  • Drain on paper towels, set aside.
  • Add half a stick of butter to bacon grease, (4 Tbl.).
  • Add chopped onion and 1 Tbl. balsamic vinegar and cook slowly over low heat for about 20 minutes til soft and sweet.
  • Remove from heat.
  • In crockpot, put 2 cans (drained) green beans.
  • Sprinkle with a little salt and pepper.

  • Cut up your 2 Tbl. butter into 8 pieces and dot top.
  • Cover and heat over high til hot throughout.

2 cups white pearl onions, trim ends, peel and left whole, can use frozen
12 -16 ounces French haricots vert, fresh, can sub. green beans, clean and trimmed
1 -2 tablespoon extra virgin olive oil (EVOO)
1/2 teaspoon sea salt
2 tablespoons butter, softened at room temperature
1 1/2 teaspoons lemon zest, finely grated
1/2-1 teaspoon fennel seed, crushed, amount to your preference, I use less than 1 teaspoon
1/4 teaspoon sea salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 425°.
  • In a large bowl or plastic zipper bag combine onions, fennel slices, EVOO, salt and pepper. Toss to coat.
  • Spread evenly in a single layer on a prepared baking sheet sprayed w/ oil. Sprinkle with sea salt.

1 lb fresh green beans, washed & snipped
6 greens onions, cleaned and very thinly sliced
4 cloves garlic, cleaned
4 tablespoons fresh lemon juice
salt & pepper
3/4 cup plain fat-free yogurt

Steps:

  • Put beans into rapidly boiling water cook until just al dente, plunge into cold water, drain well, wrap in paper towel & refrigerate Place sliced green onions in your food processor, add garlic roughly chopped, lemon juice salt and pepper, yogurt and process at high speed 4-6 minutes until very smooth, chill French the cold green beans (cut them diagonally) thinly.
