Time 10h25m

Number Of Ingredients 8

4 slice bacon, cooked
3 lb beef chuck roast
1/2 tsp garlic pepper
2 medium carrots, chopped
1 can(s) green chiles, mild chopped (4.5-oz)
1/4 c beef broth, reduced sodium
1/4 c chili sauce
1 Tbsp all purpose flour

Steps:

  • 1. Cook bacon in 12-inch nonstick skillet over medium heat. Cook until brown and crisp: remove to paper towel.
  • 2. Sprinkle roast with garlic pepper. Cook beef in bacon fat over medium heat for 5 to 6 minutes turning until brown on both sides.
  • 3. Spray a 4 to 5 quart slow-cooker. Place beef in cooker. Top with bacon and carrots. Mix green chilies, broth, chili sauce, and flour in small bowl; pour over beef.
  • 4. Cover and cook on low heat setting for 10 to 12 hours.
  • 5. Place beef on platter. Stir gravy in cooker and serve with beef.

Tips:

  • Choose the Right Chilies: Use a mix of green chilies like poblanos, Anaheims, or Hatch chilies for a smoky, mild flavor. If you want heat, include some serrano or jalapeño chilies.
  • Roast the Chilies Properly: Char the chilies over an open flame or in a hot oven until the skins blacken. This brings out their natural smokiness and flavor.
  • Remove the Seeds and Stems: Once the chilies are roasted, let them cool slightly and then remove the seeds and stems. This will reduce their bitterness.
  • Use Fresh Herbs and Spices: Enhance the flavor of the chilies with fresh herbs like cilantro, oregano, and cumin. A squeeze of lime juice can also brighten up the dish.
  • Don't Overcook the Chilies: Green chilies tend to cook quickly, so be careful not to overcook them or they will lose their texture and flavor.

Conclusion:

In conclusion, roasting green chilies is an easy and versatile way to add smoky, flavorful heat to your dishes. These recipes offer a range of options, from classic roasted green chili to innovative salsas and dips. Whether you're looking for a spicy side dish or a flavorful addition to your tacos or burritos, these recipes have something for everyone.
