This is a refreshing jello salad that is a staple of our family get togethers. This is a recipe from my Grandmother. We now joke about making this jello months in advance (don't do it!!), because my Grandmother brought it for a family dinner and said she had made it weeks before - we could not eat it, but did not have the heart to tell her. It was the beginning signs of Alzheimer's :( for her. I hope she is not spinning in her grave since I am sharing this recipe. We miss her and think of her when we have this jello for Thanksgiving and Christmas.

2 1/4 cups water
3 (3 ounce) boxes lime gelatin
1 (20 ounce) can crushed pineapple
8 ounces brick cream cheese, softened
1/2 cup milk
1 cup chopped pecans

Steps:

  • Dissolve gelatin in 2 1/4 cup boiling water.
  • Drain pineapple and add 1/4 cup of the pineapple liquid to the gelatin mixture.
  • Add pineapple to gelatin.
  • Pour into 9 x 13 glass casserole and refrigerate until soft set.
  • Mix the softened cream cheese and milk together until combined.
  • Add the nuts to cheese/milk mixture.
  • Mix the jello mixture and cream cheese mixture together.
  • Refrigerate overnight and cut into squares to serve.

I always make it for holiday dinners and one year I decided to try new things as I was a little tired and bored with the regulars. I didn't make this one year, and my grown son told me that I should not mess with tradition - this salad WAS the holidays. My kids all call this 'the green stuff'. ZWT West (Hawaiian pineapple).

1/4 lb marshmallows (16 large)
1 cup milk
1 (6 ounce) package lime Jell-O gelatin
6 ounces cream cheese
1 (20 ounce) can crushed pineapple
1 cup Cool Whip Lite
2/3 cup mayonnaise

Steps:

  • Melt the marshmallows in milk in medium saucepan over medium heat. Stir frequently.
  • Pour the milk and marshmallow mixture over lime jello in a large bowl. Stir until dissolved. Stir in cream cheese with beater. Add undrained pineapple. Mix well.
  • Cool in the refrigerator for several hours or overnight.
  • Blend mayonnaise and cool whip into the jello mixture.

1 can crushed pineapple (in juice, not syrup)
2 cups pineapple juice
2 packages lime Jell-O gelatin
1 package cream cheese (cut into small pieces)
6 sqare ice cubes (old fashioned ice tray kind)
1 cup chopped walnuts or 1 cup pecans
1 1/2 cups finely shredded cabbage
1 (16 ounce) container Cool Whip

Steps:

  • Drain juice from can of crushed pineapple into a measuring cup.
  • Add enough pineapple juice to make 2 cups.
  • Bring the 2 cups of juice to a boil.
  • Remove from heat and dissolve completely 2 pkgs.
  • of lime jello in the juice, stir, stir, stir.
  • Add all the cream cheese pieces using a gravy whip to blend.
  • Add 6 ice cubes and pineapple, stir until ice dissolves.
  • Put in the freezer until cool and syrup-like.
  • Fold in chopped nuts, cabbage (shredded very fine), and Cool Whip.
  • Refrigerate several hours.

3/4 c green goddess salad dressing(kraft)
1/4 c mayonnaise
3/4 c eagle brand sweetened condensed milk

1/4 c diced cucumber, peeled (i use english type less seeds)
1/4 c diced tomato, seeded
2 Tbsp shredded carrot
1 Tbsp diced green onion

1/2 cup boiling water
2 (3 ounce) packages cream cheese (softened)
1 (12 ounce) can Fresca soda (or any lemon-lime carbonated soda)
1 cup chopped nuts

  • Pour 1/2 cup boiling water into a mixing bowl.
  • Add jello and stir until dissolved.
  • Add cream cheese, and blend with an electric mixer till light and fluffy.

1 (16 ounce) container Cool Whip (or equivalent)
