1 1/2 cups water
6 medium potatoes, peeled & cubed
2 stalks celery, sliced (1 cup)
1/4 cup water
1 cup milk
3/4 teaspoon salt
1/4 teaspoon white pepper
2 green onions with tops (sliced finely)

Steps:

  • Bring 1 1/2 cups water to boiling, add potatoes& celery, cover and bring to boil again.
  • Reduce heat and simmer until potatoes are tender, about 20 minutes.
  • Drain liquid into blender and add 3 cups of the cooked vegetables and 1/4 cup of water.
  • Cover and blend until smooth (1 minute), then place pureed vegetables back into sauce pan with remaining potatoes and celery.
  • Stir in remaining ingredients, then heat, stirring occasionally, until hot.
  • Garnish with garlic toast, if desired.

1 1/2 cup celery, chopped
2 bunches green onions, chopped
2 tablespoons oil
2 vegetable bouillon cubes
3 teaspoons tamari soy sauce
3 teaspoons parsley

1 1/2 teaspoon paprika
1 teaspoon sea salt
1 teaspoon dill weed
1 teaspoon thyme
several dashes cayenne pepper
1/2 teaspoon vegetable broth powder

Steps:

  • Steam the green onions and celery until tender. In a large frying pan, saute the green onion in oil for 1 to 2 minutes, then add all the seasonings and saute 1 more minute. Filling the blender twice, blend all the ingredients until fairly smooth, lovely light green soup is created. 1 teaspoon grated fresh ginger root

2 tablespoons chicken stock
3 teaspoons beef bouillon granules
1 cup chopped fresh shiitake mushrooms
2 quarts water
1 cup baby portobello mushrooms, sliced
1 tablespoon minced fresh chives

Steps:

  • In a large saucepan or stockpot, combine the celery, onion, carrot, ginger, garlic, and a few of the mushrooms. Add chicken stock, beef bouillon, and water. Place the pot over high heat, and bring to a rolling boil. When the mixture reaches boiling, cover, reduce heat to medium, and cook for 45 minutes.
