Time 16m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 cups sugar snap peas (if you don't have enough, you can always make up the difference in fresh frozen peas)
1 cup frozen peas, defrosted
1/2 cup unsweetened plain yogurt (vegans use soy)
1/2 red onion
1 tablespoon sugar (vegans use beet sugar)
sea salt
fresh ground pepper
3 tablespoons dill or 3 tablespoons chives
1/4 cup bacon bits (optional. Vegans omit)

Steps:

  • Wash the peas and removes stems and strings. Chop them into 3 or 4 pieces and add to a large bowl.
  • Defrost the frozen peas and add those, as well.
  • Mince the red onion and herbs and add to the bowl, along with yogurt and salt and pepper, to taste.
  • Allow pea salad to chill for at least one hour before serving to allow flavors to marry. Just before serving, add bacon bits (if using).
  • Enjoy!

Tips:

  • For the best flavor, use fresh green peas. If fresh peas are unavailable, frozen peas can be used, but they should be thawed and drained before using.
  • Blanching the peas will help to preserve their color and crispness. To blanch the peas, bring a large pot of salted water to a boil. Add the peas and cook for 2-3 minutes, or until they are bright green and tender. Drain the peas and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Red onion adds a sharp, pungent flavor to the salad, but other onions, such as white or yellow onions, can be used instead.
  • Fresh herbs, such as mint and parsley, add a refreshing flavor to the salad. If fresh herbs are unavailable, dried herbs can be used instead.
  • To make a creamy green pea salad, add a few tablespoons of mayonnaise or sour cream to the dressing.
  • Green pea salad can be served as a side dish or as a main course. It is also a great addition to potlucks and picnics.

Conclusion:

Green pea salad is a delicious and refreshing salad that is perfect for summer. It is easy to make and can be tailored to your own taste preferences. Whether you like it simple or creamy, with bacon or without, green pea salad is sure to be a hit at your next gathering.
