MOM'S BROCCOLI & GREEN OLIVE SALAD

Mom's Broccoli & Green Olive Salad image

Mom has made this for years. We love olives and this gives the salad a zip. Of course, adjusting the amounts of each ingredient is a personal choice, if you like more bacon or more olives, etc.

Provided by Merlot

Categories     Vegetable

Time 35m

Yield 4 serving(s)

Number Of Ingredients 5

1 bunch fresh broccoli, cut to bite size pieces
1/4 cup cooked bacon (you can also use imitaion bacon bits if you are in a hurry)
1/4 cup green olives, chopped
mayonnaise
7 hard-boiled eggs, cut up

Steps:

  • Mix broccoli, bacon and green olives together.
  • Mix in enough mayo to hold the above ingredients together.
  • Gently mix in the eggs, adding more mayo to hold all ingredients together.
  • We serve this on lettuce leaves.

Tips:

  • Select top-notch ingredients: Use fresh, crisp greens and ripe, flavorful tomatoes for the best results. Opt for high-quality olives, such as Kalamata or Castelvetrano, to add a burst of briny flavor.
  • Chop evenly: Ensure uniform sizes for the chopped ingredients to ensure even cooking and a visually appealing salad.
  • Don't overcrowd the pan: When cooking the bacon, avoid overcrowding the pan, as this will prevent it from crisping up properly. Work in batches if necessary.
  • Drain the bacon thoroughly: After cooking the bacon, transfer it to a paper towel-lined plate to drain excess grease. This will help keep the salad from becoming too greasy.
  • Make the dressing in advance: The dressing can be made ahead of time and stored in the refrigerator. This makes it easy to assemble the salad when you're ready to serve it.
  • Toss the salad gently: When combining the salad ingredients, toss them gently to avoid bruising the greens.
  • Serve immediately: For the best flavor and texture, serve the salad immediately after assembling it.

Conclusion:

With endless variations and simple, fresh flavors, green salad with olives is a versatile dish that can be enjoyed for lunch, dinner, or a light snack. Its nutritional value makes it a healthy choice, and its adaptability allows for personal preferences and dietary restrictions. Whether you prefer a classic Caesar salad or a unique combination of greens, tomatoes, olives, and bacon, this dish offers a delightful culinary experience. So, explore the world of green salads with olives and enjoy the vibrant flavors and health benefits they bring to your table.
