GREEN TEA MOJITO
We've all heard of the health benefits of green tea these day, haven't we? Yes we have...thus I will dare to rationalize my little cocktail as being healthy in my mind! LOL. The flavor of the green tea is apt to get lost with the strong flavors of the rum and lime so resist the urge to add more of these ingredients. I recommend Tazo Zen Green tea blend as I think it has enough umph to stand on its own here. Original idea came from the Mellow Monk. Adapted to suit my tastes.

Steps:
- For the syrup:.
- In a medium sauce pan, combine two ingredients and stir over medium heat until sugar has dissolved. Bring tea mixture to a light boil. Simmer, stirring occasionally, until reduced to a half of the original amount to create a syrup. This will take 15 minutes or more, depending how thick you want your syrup. Let cool.
- For the drink:.
- In a cocktail shaker, combine rum, simple syrup, bitters, and a sprig of mint. Shake well. Pour into your glass (with or without ice cubes) and top with sparkling water. Garnish with a sprig of mint and enjoy.

Tips:
- Use fresh mint leaves for the best flavor. If you don't have fresh mint, you can use dried mint, but it won't be as flavorful.
- Use a good quality green tea. A light and delicate green tea, such as sencha or jasmine tea, will work well in this recipe.
- Don't over-muddle the mint leaves. You want to release their flavor, but you don't want to crush them completely.
- If you don't have simple syrup, you can make your own by dissolving 1 cup of sugar in 1 cup of boiling water. Let it cool before using.
- Garnish your mojitos with a lime wedge and a sprig of mint. This will add a pop of color and flavor to your drink.
Conclusion:
The green tea mojito is a refreshing and flavorful cocktail that is perfect for any occasion. It is easy to make and can be customized to your own taste. Whether you like your mojitos sweet, sour, or somewhere in between, this recipe is sure to please. So next time you're looking for a delicious and unique cocktail, give the green tea mojito a try. You won't be disappointed.
