2 pounds small boiling potatoes, scrubbed
a 6-ounce can frozen apple juice concentrate, thawed
1/3 cup apple jelly
1/4 cup vegetable oil
3 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons Dijon-style mustard
2 teaspoons dried rosemary
1 teaspoon crumbled dried sage
2 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Arrange the pork chops in one layer in a large shallow dish. In a kettle combine the potatoes with enough water to cover them by 1 inch, simmer them for 10 minutes, or until they are just tender, and drain them. In a blender blend together well the apple juice concentrate, the jelly, the oil, the vinegar, the Worcestershire sauce, the mustard, the rosemary, the sage, the salt and the pepper. Halve the potatoes and in a bowl toss them gently with 1/4 cup of the apple and herb marinade. Pour the remaining marinade over the chops, coating them thoroughly, and let the chops and the potatoes marinate separately, covered and chilled, overnight.
  • Grill the chops, the marinade discarded, on an oiled rack set 5 to 6 inches over glowing coals for 7 to 8 minutes on each side, or until they are just cooked through. Grill the potatoes, cut sides down, for 10 minutes, or until they are golden brown.

2 cups apple juice
1 tablespoon coarsely ground black pepper
1/4 cup salt
1/4 cup light brown sugar
1 teaspoon red pepper flakes
5 rib end pork chops, about 1 1/2 pounds
1 tablespoon grill seasoning

  • In a large pot over medium-high heat, add 1 cup of water, apple juice, pepper, salt, sugar and red pepper flakes. Bring to a simmer making sure to stir occasionally to dissolve the salt and sugar. Remove from heat and add to a large bowl with 2 cups of ice.
  • Once the brined has cooled add pork chops. Brine for at least 4 hours or up to 24 hours in the refrigerator.
  • Remove pork from brine, rinse with cold water and pat dry with paper towels.

4 pork chops, 1 inch thick
1 cup apple juice
2 tablespoons lemon juice
1 teaspoon sage
2 tablespoons brown sugar
1 onion, minced
2 -3 firm apples (I use Granny Smith for this)
salt & freshly ground black pepper

  • Place meat in a plastic bag.
  • In a small bowl, mix apple and lemon juices, sage, brown sugar and onion and stir until sugar is dissolved.
  • Pour over meat.
  • Close bag tightly and turn to coat chops well.

6 pork chops, about 1 inch thick each
2 cups cold water
3 tablespoons brown sugar
1 tablespoon kosher salt
1 cup apple cider
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon fresh ground black pepper
3 stalks fresh rosemary, whole branches
2 bay leaves

Steps:

  • In a bowl add the brown sugar, kosher salt and apple cider. Stir to dissolve.
  • Add 2 cups of cold water to the bowl. Add two tablespoons of olive oil, balsamic vinegar, pepper, rosemary branches and bay leaves.
  • Place the pork chops into a large sealable plastic bag. Place this plastic bag into another of equal size to offer extra safety. The plastic bags can be standing in a large pot to make it more secure. Pour the brine overtop of the chops and seal the plastic bags. Well, I have yet to really eat good BBQ pork chops. I was tired of the three or four different baking methods and I decided to try something a bit different. If you are not into sweet, then this probably isn't the recipe for you. I would suggest squeezing a bit of lime juice over the meat in order to break up the sweetness. I have never paid attention to what type of pork chops I had either, I just grabbed and baked...but apparently it is all in the cut of the meat! I also froze a few heads of romaine lettuce for about an hour, divided it up into 8 portions, and added Parmesan cheese and dressing of choice.... MMMM!

1 cup light brown sugar
1 cup soy sauce
1 cup orange juice
½ cup spicy brown mustard
⅓ cup honey
2 tablespoons Worcestershire sauce

1 lime, juiced
½ cup butter
