I was tired of eating baked potatoes the old fashioned way with gobs of butter, so I created this simple recipe to put a little twist on them. My family and friends love them and I hope you do too.

4 large baking potatoes, quartered
2 tablespoons olive oil
2 teaspoons freshly ground black pepper
2 teaspoons garlic powder
2 teaspoons dried rosemary
salt to taste

Steps:

  • Place the potatoes into a large pot with water to cover. Bring to a boil and cook over medium-high heat for about 10 minutes, or until tender.
  • Preheat the grill to medium-high heat. Drain potatoes and toss with olive oil, black pepper, rosemary and salt to taste.
  • Place the potatoes skin-side down over indirect heat on the grill and reserve liquid. Grill for about 15 minutes. Remove potatoes to a serving plate and sprinkle with the reserved olive oil mixture.

6 medium-size baked potatoes
4 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper to taste
2 tablespoons finely minced fresh parsley

Steps:

  • Preheat a charcoal, gas or electric grill.
  • Cut the freshly baked potatoes in half lengthwise. Brush the cut side of each with some of the olive oil. Season to taste with salt and pepper.
  • Place the potatoes cut side down on the grill. Grill until they are heated and brown grill marks are on the surface, but don't blacken.
  • Sprinkle with parsley and serve.

Veggie lovers delight in these sweet potatoes from Jodi Moreno of What's Cooking Good Looking. Baked using Reynolds Wrap® Aluminum Foil, stuffed with simmering BBQ black beans and finished with a crisp yogurt-based cilantro cream, you won't be able to resist this flavorful dish.

2 large sweet potatoes
2 tablespoons sunflower seed oil
1 red onion, diced
2 cloves garlic, minced
1 (15 ounce) can black beans, drained
1 cup barbeque sauce
6 ounces plain yogurt
2 tablespoons minced shallots
¼ teaspoon salt
1 tablespoon lemon juice
½ cup cilantro leaves, plus more for garnish

Steps:

  • Preheat the grill to medium heat.
  • Wrap the sweet potatoes in Reynolds Wrap® Aluminum Foil individually so they are completely covered. Place them onto the grill, cover and cook for 45 minutes to 1 hour. You want the potatoes to feel very soft inside the foil. When they are done, remove them from the grill and keep them in the foil until ready to assemble and serve.
  • Make the beans while the potatoes are baking. Heat oil in a medium-sized pan over medium heat. Add the onions and cook for 7 to 10 minutes until soft and starting to brown. Add the garlic and cook for another 2 minutes. Then add the beans and BBQ sauce. Stir to combine the ingredients, bring the heat to low and continue cooking for another couple of minutes to heat all of the ingredients.
  • Make the cilantro cream. Place the yogurt, shallots, salt and lemon juice into a food processor and pulse several times until smooth. Add in the cilantro leaves and pulse a couple of times just until they are chopped and incorporated.
  • Assemble the potatoes. Cut a slit down the center lengthwise of the potato and gently pull the sides apart just enough to create a well for the beans. Then add a couple spoonfuls of the BBQ beans and finish with a drizzle of the cilantro cream. Garnish with some roughly chopped cilantro leaves.

6 new potatoes, halved (medium size)
3 cups chicken or 3 cups vegetable broth
4 garlic cloves, smashed
1 lemon, halved
1/2 tablespoon kosher salt
1/4 cup butter
garlic salt (to taste)
ground black pepper (to taste)

Steps:

  • In a bowl (if using microwave) or small pot on the stove combine broth, smashed garlic cloves, 1/2 of one lemon, 1/2 Tablespoon Kosher salt. Cover tightly with lid or saran wrap and bring to a simmer for 5 minutes.
  • Add the halved potatoes, recover tightly and simmer until potatoes are fork tender (about 5-8 minutes depending on the size of your potatoes). Drain and discard lemon half and garlic.
  • In a bowl add the butter then the potatoes, carefully swirl the potatoes around in the bowl until butter is melted and has coated all the potatoes.
  • Sprinkle the garlic salt and ground black pepper (to taste). With the last half of the lemon squeeze juice (about 1 tablespoon) over the top of the potatoes and once again carefully "swirl" potatoes around in the bowl to coat.
  • On a preheated greased grill or oven (on greased baking sheet for oven) at 350 degrees F place potatoes cut side down for 10 minutes, turn and cook for another 5 minutes. (watch the color of the potatoes on the grill as they may be cooked faster than the oven).
  • Remove from heat and let potatoes rest 5 minutes before eating.
  • Enjoy!
