Time 50m

Yield 4

Number Of Ingredients 18

2 tablespoons unsalted pistachios
1 medium avocado, peeled and pitted
2 cups lightly packed fresh basil leaves
2 tablespoons grated Parmesan cheese
3 medium cloves garlic, chopped
½ teaspoon salt
¼ teaspoon pepper
¼ cup olive oil
2 medium ears corn, shucked
2 tablespoons unsalted butter, softened
4 store-bought flatbreads (or naan)
2 tablespoons olive oil
2 cups shredded Gruyere cheese
1 cup sliced fresh mozzarella cheese
½ cup thinly sliced red onions
1 cup arugula
1 pinch Crushed red pepper flakes, for serving
Reynolds Wrap® Aluminum Foil

Steps:

  • Heat a skillet over medium heat. Add pistachios; cooking, shaking often, until toasted, about 5 minutes.
  • Make the pesto by combining the pistachios, avocado, basil leaves, Parmesan, garlic, salt and pepper in a blender. Pulse until the mixture is roughly chopped and then with the blender running, slowly stream in 1/4 cup olive oil. Continue blending until the pesto is a thick paste, scraping down the sides of the blender as needed. Set the pesto aside.
  • Preheat the grill for 10 minutes on medium heat. Spread the butter on the corn, then wrap each ear of corn in Reynolds Wrap® Aluminum Foil. Place the corn on the grill, close the lid and grill the corn, turning it frequently until it is tender, 15 to 20 minutes. Unwrap the corn and when cool enough to handle, slice the kernels off the cob.
  • Brush both sides of the flatbreads with 2 tablespoons olive oil and grill them for 1 to 2 minutes on each side to warm them. Remove the flatbreads from the grill and top with the avocado pesto, Gruyere, mozzarella, red onions and corn.
  • Return the flatbreads to the grill, close the lid and grill until the cheese is melted, about 3 minutes.
  • Remove the flatbreads from the grill and transfer them to serving plates. Top the flatbreads with arugula and crushed red pepper flakes (optional) and then slice and serve immediately.

Tips:

  • Choose the right broccoli: Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid crowns that are yellowing or have loose florets, as these signs indicate that the broccoli is past its prime.
  • Prepare the broccoli properly: Before grilling, cut the broccoli into 1-inch florets and toss them with olive oil, salt, and pepper. This will help them to caramelize and develop a slightly smoky flavor.
  • Grill the broccoli to perfection: Grill the broccoli florets over medium heat for about 5 minutes per side, or until they are tender and slightly charred. Keep an eye on them to prevent them from burning.
  • Make the flatbread dough: While the broccoli is grilling, prepare the flatbread dough. You can use your favorite recipe or a store-bought dough. If you are using a store-bought dough, let it come to room temperature before rolling it out.
  • Assemble the flatbreads: Once the broccoli is grilled and the dough is ready, assemble the flatbreads. Spread a thin layer of pesto sauce on each dough round and then top with the grilled broccoli, cheese, and any other desired toppings.
  • Bake the flatbreads: Bake the flatbreads in a preheated oven at 450 degrees Fahrenheit for about 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

Conclusion:

Grilled broccoli flatbread pizzas are a delicious and easy-to-make meal that is perfect for any occasion. With a crispy crust, tender broccoli, and melted cheese, these flatbreads are sure to be a hit with everyone at your table. So next time you are looking for a quick and tasty meal, give grilled broccoli flatbread pizzas a try.
