Yield 2

Number Of Ingredients 8

1 tablespoon mayonnaise, divided
2 slices day-old sourdough bread
2 tablespoons shredded Parmesan cheese
2 tablespoons finely grated extra-sharp Cheddar cheese, at room temperature
1 tablespoon finely grated Jack cheese, at room temperature
2 teaspoons minced green onion
1 clove garlic, minced
2 dashes cayenne pepper

Steps:

  • Spread 1/2 teaspoon mayonnaise onto 1 side of each slice of bread. Sprinkle 1 tablespoon Parmesan cheese over mayonnaise layer, pressing cheese firmly into the bread.
  • Combine remaining mayonnaise, Cheddar cheese, Jack cheese, green onion, garlic, and cayenne pepper in a bowl.
  • Flip 1 bread slice over so the Parmesan layer is facing down, and spread Cheddar cheese mixture onto the bread. Top the Cheddar cheese mixture layer with the other slice of bread, so the Parmesan is on the outside of the sandwich. Cut sandwich into 4 equal slices.
  • Heat a nonstick pan over medium heat; turn heat down to medium-low. Place sandwich sticks in the skillet and cook until golden brown and cheese is softly melted, 2 to 3 minutes per side.

Yield 12

Number Of Ingredients 4

24 (1 ounce) sticks string cheese
5 eggs, beaten
3 cups Italian seasoned bread crumbs
1 quart vegetable oil for frying, or as needed

Steps:

  • Remove string cheese sticks from plastic wrappings and cut the strings in half crosswise.
  • Line a baking sheet with parchment paper. Place eggs in a bowl and bread crumbs into a large shallow bowl.
  • Dip cheese stick halves into egg and roll in bread crumbs to completely coat the sticks; place breaded cheese sticks onto the prepared baking sheet. Allow cheese sticks to stand at room temperature for about 5 minutes to set, and repeat dipping in egg and bread crumbs to form a thick coating. Freeze breaded cheese sticks for at least 2 hours.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Deep fry cheese sticks, a few at a time, until the coating is golden brown and crisp and the cheese is soft, 5 to 8 minutes. Let sticks drain on paper towels; cool slightly and serve warm.

Tips:

  • Choose the right bread: A sturdy bread that can withstand the heat of the grill is best. Some good options include sourdough, French bread, and ciabatta.
  • Use high-quality cheese: The cheese is the star of the show, so it's important to use a cheese that melts well and has a lot of flavor. Some good options include cheddar, mozzarella, and Swiss.
  • Don't overcrowd the grill: Make sure to leave enough space between the grilled cheese sticks so that they can cook evenly.
  • Cook the grilled cheese sticks over medium heat: This will help to prevent them from burning.
  • Serve the grilled cheese sticks immediately: They're best when they're hot and gooey.

Conclusion:

Grilled cheese sticks are a quick and easy snack or meal that can be enjoyed by people of all ages. With just a few simple ingredients, you can create a delicious and satisfying dish that is sure to please everyone. So next time you're looking for a quick and easy meal, give grilled cheese sticks a try.
