Tips:

  • Choose the right potatoes: Small, waxy potatoes like baby red potatoes or Yukon Gold potatoes work best for this recipe as they hold their shape well and cook evenly.
  • Cut the potatoes evenly: This will ensure that they cook at the same rate. If the potatoes are different sizes, the smaller ones may overcook while the larger ones are still undercooked.
  • Season the potatoes well: Be generous with the salt and pepper. You can also add other herbs and spices to taste, such as garlic powder, onion powder, or paprika.
  • Wrap the foil packets tightly: This will prevent the juices from leaking out and ensure that the chicken and potatoes cook evenly. If you are using a double layer of foil, make sure to seal the edges of both layers tightly.
  • Cook the foil packets over medium heat: This will help to prevent the chicken and potatoes from burning. If you are using a gas grill, turn the burners to medium-low heat.
  • Cook the foil packets for the recommended time: The cooking time will vary depending on the thickness of the chicken breasts and the size of the potatoes. Check the chicken and potatoes after the minimum cooking time to make sure they are cooked through.

Conclusion:

Grilled chicken and potato foil packs are a delicious and easy way to cook a meal on the grill. They are perfect for busy weeknights or for a casual weekend gathering. The chicken and potatoes are cooked in a flavorful marinade, and the foil packets keep them moist and tender. This recipe is also very versatile. You can use different types of potatoes, vegetables, and seasonings to create your own unique dish. So next time you're looking for a quick and easy meal, give grilled chicken and potato foil packs a try. You won't be disappointed!
