Steps:
- For the buttermilk dressing: Whisk together the buttermilk, mayonnaise, chives, parsley, garlic, lemon zest and juice and 1 tablespoon water in a medium bowl. Season with salt and pepper and set aside.
- For the grilled chicken and beans: Preheat a grill or grill pan (over 2 burners) to medium-high heat. Make a double thickness of aluminum foil about 18 inches square. Toss the green beans with the olive oil and salt and pepper to taste and spread on one half of the foil. Fold the foil to seal the green beans in a rectangular package, leaving a little dome at the top. Put the green bean package on the grill and grill until tender, about 18 minutes. Remove from the grill and let the beans steam in the package until ready to serve.
- Meanwhile, brush the onion rings with olive oil and season with salt and pepper. Grill on the other side of the grill until charred and tender, 8 to 10 minutes. Remove to a bowl when done.
- Sprinkle the chicken with salt and pepper, brush with olive oil and squeeze the 2 lemon halves over. Grill the chicken, turning once, until cooked through, about 3 minutes per side. During the last 2 minutes, add the lemon quarters to the grill just to char.
- To serve: Empty the green beans into the bowl with the onions and toss with 3 tablespoons of the dressing. Mound the vegetables on plates or a platter and top with the chicken. Drizzle with the remaining dressing and garnish with the grilled lemon wedges.
PECAN CRUSTED CHICKEN OVER FIELD GREENS WITH CARAMEL CITRUS VINAIGRETTE
Steps:
- For the chicken:
- Preheat heat oven to 400 degrees F.
- Place chicken and lowfat buttermilk into a plastic bag and allow to sit for 15 minutes up to overnight.
- While chicken is marinating combine pecans with spices and mix well. Place mixture into a shallow dish. Remove chicken and allow excess buttermilk to drain. Coat both sides of the chicken pieces with the pecan/spice mixture.
- Heat a medium, 10-inch oven-proof saute pan on the stove. Using 1/2 teaspoon oil per piece, sear chicken for 1 minute on each side and then place entire pan into oven (if you do not have an oven proof saute pan simply transfer chicken to a baking sheet and proceed) for 10 to 15 minutes. When done and slightly cooled, slice. Note: chicken can be done a day ahead of time. Leftover chicken makes a great chicken salad.
- For the greens:
- Cut, wash and spin greens. Toss greens with tomatoes and carrot, set aside.
- For the vinaigrette:
- Combine the caramel sauce with water and citrus juices and whisk. While whisking, drizzle in olive oil, lime zest, if using, and season with salt and pepper, to taste.
- To Assemble:
- Place greens in a bowl and lightly toss with 1/2 of the dressing. Mound on 4 plates and top with chicken and remaining dressing. ENJOY!

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your salad taste its best. Look for ripe greens, juicy citrus fruits, and a good quality olive oil. - Don't overdress the salad: A little bit of dressing goes a long way. Too much dressing will weigh down the salad and make it soggy. - Add some crunch: Nuts, seeds, and crispy vegetables add texture and flavor to salads. Try adding almonds, walnuts, sunflower seeds, or croutons. - Experiment with different flavors: There are endless possibilities when it comes to salad dressings. Try using different citrus fruits, herbs, and spices to create unique and flavorful dressings. - Make it a meal: Add some grilled chicken, fish, or tofu to your salad to make it a complete meal. You can also add some quinoa, brown rice, or lentils for extra protein and fiber. Conclusion:
