3 boneless skinless chicken breasts (1 lb)
1 tablespoon olive oil
1 medium onion, finely chopped (3/4 cup)
3 cups fresh broccoli florets
2 ripe mangoes, seed removed, peeled, and cut up
1 red bell pepper, chopped
1 medium zucchini, quartered lengthwise, then cut crosswise into slices (1 cup)
1 bottle (8 oz) Italian dressing
1/2 teaspoon salt

Steps:

  • Heat gas or charcoal grill. Cook pasta as directed on package; drain. Rinse with cold water to cool; drain well.
  • Meanwhile, place chicken on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning once or twice until juice of chicken is clear when center of thickest part is cut (170°F). Cool slightly. Cut into 3/4-inch cubes.
  • In 8-inch nonstick skillet, heat oil over medium-high heat. Stir in onion; cook uncovered 5 minutes, stirring occasionally.

1 lb rotini pasta
2 lbs thin-sliced chicken cutlets
2 tablespoons lemon juice
1 large red pepper, cored, seeded and diced
1 large green pepper, cored, seeded and diced
1 medium red onion, chopped
2 scallions, trimmed and thinly sliced
2 tablespoons mined fresh dill
1 cup light mayonnaise
1/2 cup red wine vinegar
1/2 cup honey
1 teaspoon prepared mustard
1 teaspoon sugar
1 teaspoon onion powder
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup canola oil

Steps:

1/4 cup grated Parmigiano-Reggiano or Pecorino Romano cheese, a handful
2 bunches arugula, thoroughly washed and coarsely chopped
1 small head radicchio, cored and coarsely chopped
2 cups fresh basil, 20 leaves, coarsely chopped
1/4 cup fresh flat-leaf parsley, a generous handful, chopped
3 celery ribs, thinly sliced
1 ball fresh mozzarella cheese, cut into bite-size pieces
1 pint grape tomatoes, left whole if small, cut in half if large

  • Heat a grill pan or outdoor grill to high heat.
  • Bring a large pot of water with a tight-fitting lid to a boil over high heat. Once the water boils, add some salt and the pasta, and cook according to package directions until al dente.

Although it takes a little time to caramelize the onions, it's easy (they pretty much just sit in the pan and cook themselves), and you will not believe how sweet and delicious they end up.

2 tablespoons vegetable oil
1 bunch broccoli
1 pound uncooked salad macaroni or other small pasta
1/4 cup sliced almonds
1 tablespoon balsamic vinegar
