GRILLED CHICKEN WINGS WITH HONG KONG SPICES (SHEK O WINGS)

Grilled Chicken Wings with Hong Kong Spices (Shek O Wings) image

Grilling normally plays a minor role in Chinese cuisine, but the Sunday crowds transform Shek O beaches into barbecue central. Vendors do a lively business in charcoal and grilling utensils. The grills themselves are ingenious fabrications of chicken wire and rebar (the ribbed metal bars used for reinforcing concrete). The most popular food for grilling is chicken wings, which are marinated in soy sauce and honey. ShareTweetPin14 Shares

They taste great at room temperature, so you can even cook them in advance. Prep time, as always, includes marinating time.

Tips:

  • Choose the right chicken wings: Use fresh, whole chicken wings for the best flavor and texture. Avoid frozen or pre-cut wings, as these can be less flavorful and more difficult to cook evenly.
  • Pat the chicken wings dry: Before cooking, pat the chicken wings dry with paper towels. This will help the spices adhere better and prevent the chicken from steaming instead of grilling.
  • Use a flavorful marinade: The marinade is key to adding flavor to the chicken wings. The recipe in the article uses a combination of soy sauce, rice wine, ginger, garlic, and five-spice powder, but you can adjust the ingredients to suit your own taste.
  • Grill the chicken wings over high heat: Grilling the chicken wings over high heat will help to create a crispy exterior and juicy interior. Make sure to preheat your grill before adding the chicken wings.
  • Baste the chicken wings with the marinade: Basting the chicken wings with the marinade while they are grilling will help to keep them moist and flavorful. Use a pastry brush to apply the marinade evenly.

Conclusion:

Grilled chicken wings with Hong Kong spices, also known as Shek O wings, are a delicious and easy-to-make appetizer or main course. By following the tips above, you can create perfectly cooked chicken wings that are crispy on the outside and juicy on the inside. Serve them with your favorite dipping sauce and enjoy!
