Olive oil
Salt and freshly ground black pepper
1/2 pound triple creme cheese (recommended; Red Hawk) or brie, thinly sliced
2 lemons, halved
8 paper thin slices prosciutto
1/4 pound baby arugula

Steps:

  • Heat the grill to high.
  • Brush the chicken on both sides with oil and season with salt and pepper, to taste. Grill until slightly charred on both sides and just cooked through, about 2 minutes per side. 4 bone-in pork loin chops (1 inch thick)
1/2 cup ketchup
1/2 cup water
1/4 cup white vinegar
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
2 tablespoons dried minced onion
1 tablespoon soy sauce
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon ground mustard
4 thin slices fully cooked ham
4 thin slices part-skim mozzarella cheese

Steps:

  • Cut a pocket in each chop. Combine the next 10 ingredients. Reserve 1/2 cup for basting and refrigerate. Pour remaining marinade into a large resealable plastic bag or shallow glass container. 4 center-cut boneless pork chops, 3/4 inch to 1 inch thick (each 6 to 7 ounces)
4 slices deli ham (each slice large enough to cover a pork chop)
1 (5 ounce) box melba toast, broken into rough pieces
1/4 teaspoon table salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1/8 teaspoon sugar
6 tablespoons mayonnaise

6 pork cutlets, butterflied
12 slices brick cheese
6 slices bacon
2 eggs, beaten
1 cup unseasoned breadcrumbs
1 teaspoon salt
2 teaspoons fresh ground black pepper

1 pound bacon
1 large onion (Vidalia are the best), sliced into rings
10 oz crumbled blue cheese
mushrooms
raspberry vinaigrette
garlic salt
seasoned salt
black pepper
parmesan cheese, freshly grated

Steps:

  • Remove all the fat from the chicken. Using a meat tenderizer, pound chicken until it is all one thickness--the thinner the better. Season the chicken front and back with garlic salt and pepper. Take the seasoned chicken, place in a bowl, and cover with raspberry vinaigrette. Let sit in the refrigerator for 2 to 4 hours. Turn chicken every once in a while to make sure it is coated with the vinaigrette marinade.
  • After marinating, remove chicken. Evenly sprinkle a thin layer of blue cheese over each breast. Pepper the chicken. Slowly roll up the chicken and secure with a toothpick. Take a piece of bacon, wrap around the chicken and secure again with toothpick. Continue rolling all chicken breasts.
