¼ cup Sriracha chile sauce
1 teaspoon smoked paprika
½ teaspoon garlic powder

1/4 cup olive oil
1 tablespoon lemon juice
2 teaspoons dill weed
2 garlic cloves, minced
3/4 teaspoon salt

3 tablespoons finely chopped fresh dill
2 sticks unsalted butter, slightly softened

Fresh dill
1 teaspoon grated lemon zest
1/4 cup fresh lemon juice
1/2 cup olive oil
1 tablespoon finely chopped fresh dill
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
1 pound orzo pasta, cooked al dente, drained
6 ounces feta cheese, crumbled
1 large yellow pepper, finely diced
1 large red pepper, finely diced
1/2 cup kalamata olives, pitted and quartered
2 scallions, finely sliced

40 jumbo shrimp, peeled and deveined

Steps:

  • Place lemon juice in a small non-reactive saucepan and reduce to 3 tablespoons. Place the butter in a medium bowl, add the lemon syrup and dill, then season with salt and pepper to taste. Mix well and scrape into a ramekin. Refrigerate for 1 hour.

2 tablespoons minced fresh dill
2 tablespoons fresh lemon juice

2/3 cup vegetable oil
eighteen 8-inch wooden skewers, soaked in warm water for 1 hour
18 large shrimp, shelled

  • In a saucepan of boiling water boil the garlic for 15 to 20 minutes, or until it is tender but not soft, drain it, and discard the peel carefully, leaving the cloves whole. In a bowl whisk together the dill seeds, the fresh dill, the lemon juice, and the red pepper flakes, add the oil in a stream, whisking, and whisk the marinade until it is emulsified. Onto the end of each skewer thread a shrimp and 1 garlic clove. Arrange the skewers, shrimp end down, in a bowl just large enough to hold them. 1 cup kosher salt
6 tablespoons sugar
2 quarts water
3 cloves garlic, peeled and chopped
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon paprika
2 1/2 tablespoons olive oil
2 1/2 teaspoons lemon juice
2 lbs large shrimp, brined for 20-25 min

Steps:

  • Prepare brining solution and brine shrimp for 20-25 minutes -- remove shrimp feet and devein with shells left on (this isn't absolutely necessary but it does seem to result in moister grilled shrimp), rinse and dry.
  • Using mortar& pestle smash garlic and salt into a smooth paste.
  • Add cayenne and paprika and mix well.
  • Add olive oil and lemon to form a thin paste.
