Tips:

  • Choose the right eggplant: Look for eggplants that are firm and heavy for their size, with smooth, unblemished skin. Avoid eggplants that are soft, wrinkled, or have brown spots.
  • Slice the eggplant evenly: This will help them cook evenly. If the slices are too thick, they will take longer to cook and may not cook through. If they are too thin, they will cook too quickly and may burn.
  • Grill the eggplant over medium heat: This will help them cook evenly without burning. If the heat is too high, the eggplant will burn on the outside before it is cooked through. If the heat is too low, the eggplant will take too long to cook and may become mushy.
  • Brush the eggplant with oil before grilling: This will help prevent them from sticking to the grill. You can use olive oil, vegetable oil, or even cooking spray.
  • Cook the eggplant until it is tender: The eggplant is done cooking when it is soft and slightly charred. You can check this by inserting a fork into the eggplant. If the fork goes in easily, the eggplant is done.
  • Make the lemon aioli sauce while the eggplant is grilling: This will give the flavors time to meld. The sauce is also delicious on other grilled vegetables, such as zucchini, squash, and bell peppers.

Conclusion:

Grilled eggplant sandwiches with lemon aioli, feta, and mint are a delicious and easy-to-make summer meal. The eggplant is grilled until tender and smoky, and the lemon aioli sauce is tangy and refreshing. The feta and mint add a nice salty and herbaceous flavor. These sandwiches are perfect for a light lunch or dinner, and they can be served on their own or with a side salad.
