½ cup blood orange marmalade
¼ cup water
¼ cup soy sauce
¼ cup prepared mojo criollo dressing
2 tablespoons brown sugar
2 tablespoons orange juice
1 teaspoon ground ginger

1 ½ teaspoons grated orange zest
2 pounds beef chuck steak

Steps:

  • Mix marmalade, water, soy sauce, mojo criollo dressing, brown sugar, orange juice, ginger, garlic powder, and orange zest in a bowl. 1/4 teaspoon Cajun seasoning
1/4 teaspoon cayenne
Salt and pepper
2 tablespoons canola oil
1 (14 ounce) NY strip steak
Orange Bourbon Glaze, recipe follows
2 tablespoons diced shallots
1/4 cup butter, divided
1 cup bourbon
2 seedless oranges, peeled and segmented
1/2 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups beef stock

Steps:

  • Preheat grill to high and oven to 350 degrees F.
  • In a medium bowl, combine Cajun seasoning, cayenne, salt, pepper and 2 tablespoons canola oil. Rub mixture on both sides of the steak. In a saute pan, sear steak for 7 minutes on both sides. Place steak in a plastic bag to marinate for 1 hour in refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 12 minutes (6 minutes on each side). Remove from grill with tongs and let rest for 8 to 12 minutes. Using a serving spoon, add Orange Bourbon Glaze to steak.
  • In a medium saucepan over medium-high heat saute the shallots in 2 tablespoons of butter until caramelized. Whisk in the bourbon, oranges, brown sugar, salt and pepper. Bring to a simmer over medium-high heat. Reduce heat to medium-low and add beef stock. Simmer until mixture is a sauce-like consistency. Remove from heat. Whisk in the remaining 2 tablespoons of butter.

3 tablespoons olive oil
2 tablespoons unsalted butter
1 shallot, minced
1 clove garlic, minced
2 medium-ripe tomatoes, peeled, seeded and chopped
1/4 cup fresh thyme leaves
2/3 cup fresh orange juice
1/4 to1/2 cup dry white wine
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the swordfish steaks dry with paper towels. Coat on both sides with two tablespoons olive oil. Set aside.
  • Heat the remaining olive oil in a skillet with one tablespoon butter. Add the shallots and garlic and cook until soft. Add the tomatoes and thyme and cook for three minutes.

Leaves you with a great meal and time to mingle. Cut the recipe in half and use only one 2 lb. steak or two 1 pound steaks. Other steak cuts work well, too. 2/3 cup dry red wine
1/2 cup fresh orange juice
1/3 cup fresh lime juice
1/2 cup honey
1/4 cup cider vinegar

1 teaspoon finely grated orange zest

  • To make the marinade, combine all the ingredients in a shallow 14-inch glass baking dish and stir until the honey is dissolved.
  • Add the flank steaks and turn to coat with the marinade. Cover and refrigerate overnight.
