3 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper
4 to 5 portobello mushrooms (about 1 pound), trimmed and cleaned
4 flour tortillas (10-inch)
8 ounces Monterey Jack cheese, shredded (2 1/2 cups)

Brush both sides of mushrooms with oil mixture; starting with stem side up, grill mushrooms until tender when pierced with the tip of a sharp paring knife, 8 to 12 minutes, turning once. Remove from grill; slice 1/2 inch thick.

Tips:

  • Use ripe, flavorful portobello mushrooms: The quality of your mushrooms will greatly impact the flavor of your quesadillas. Look for mushrooms that are firm and have a deep, earthy color.
  • Marinate the mushrooms: Marinating the mushrooms in a flavorful mixture of olive oil, garlic, and herbs will help to enhance their flavor and make them more tender.
  • Don't overcrowd the grill: When grilling the mushrooms, don't overcrowd the grill. This will prevent them from cooking evenly and could cause them to steam rather than grill.
  • Use a good quality cheese: The type of cheese you use will also impact the flavor of your quesadillas. Use a cheese that melts well and has a bold flavor, such as cheddar, mozzarella, or pepper jack.
