GRILLED HERB POTATOES
Every year my father and I plant a garden together. After an especially great growing season, we had plenty of produce to eat! We like to use fresh herbs from our garden but dry is just as tasty in this dish. -Bernadette Bennett, Waco, Texas

Steps:
- Wash potatoes and slice into 1/2" thick sections. Place into a zip-top plastic bag with all the other ingredients. Seal bag and toss to coat potatoes. Set aside until ready to cook.
- Preheat barbecue to medium low.
- Place potato slices over the heat of a well-oiled grill. Cook for 8-10 minutes per side, or until golden brown, crispy, and cooked through.
Tips:
- Choose the right potatoes: Waxy potatoes, such as Yukon Gold or red potatoes, hold their shape well and are less likely to fall apart on the grill.
- Boil the potatoes first: This will help them cook through evenly on the grill and prevent them from burning.
- Use a grill basket: This will help keep the potatoes from falling through the grates and make them easier to flip.
- Grill the potatoes over medium heat: This will help them cook through without burning.
- Baste the potatoes with oil or butter: This will help them brown and prevent them from sticking to the grill.
- Season the potatoes with herbs and spices: This will add flavor and make them more delicious.
Conclusion:
Grilled potatoes with herbs are a delicious and easy side dish that can be enjoyed all summer long. With just a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that will be a hit at your next barbecue or picnic. So fire up the grill and give this recipe a try!
