Time 12m

Yield 4 servings

Number Of Ingredients 5

8 Black Mission figs
1/2 cup blue cheese, cut into cubes
8 prosciutto (thinly sliced, cut in half lengthwise)
2 tablespoons extra-virgin olive oil
Sea salt and freshly ground black pepper

Steps:

  • Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
  • Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
  • Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.

GRILLED PROSCIUTTO WRAPPED FIGS STUFFED WITH GOAT CHEESE

Time 20m

Yield 4 servings

Number Of Ingredients 9

6 Black Mission figs, cut in 1/2
1/2 cup balsamic vinegar, plus extra for dressing
Crushed red pepper flakes, optional
12 slices prosciutto
1/2 log goat cheese
Extra-virgin olive oil
2 cups baby arugula
1/2 cup Parmigiano-Reggiano, shaved with a vegetable peeler
Kosher salt

Steps:

  • Preheat the grill and brush with a grill brush to remove any excess crud and fat. After brushing, run an oiled towel over the grates to pick up any loosened crud or soot.
  • Drizzle each fig half with vinegar and fill each fig center with goat cheese. Sprinkle a couple flakes of crushed red pepper, if using, on top of the goat cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
  • Put the figs on a cooler spot of the preheated grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, about 5 to 6 minutes.
  • While the figs are grilling, in a large bowl, toss the arugula with a little extra-virgin olive oil, some balsamic vinegar and the Parmigiano-Reggiano. Taste, and add salt, if needed. Arrange on individual serving plates or a serving platter and top with the figs. Drizzle a couple of drops of balsamic on each fig and serve.
  • Its figgy delicious!

Number Of Ingredients 6

12 fresh black Mission figs, stems removed
2 ounces blue cheese, cut into 12 equal pieces
6 pecan halves, broken in half lengthwise
6 thin slices proscuitto, 2 to 3 ounces, cut in half lengthwise
Olive oil, for brushing
Honey, for serving

Steps:

  • Place 12 skewers (4 inches each) in water to soak for at least 10 minutes. Heat a grill pan over medium-high heat.

Gently squeeze figs to enclose the cheese. Wrap figs horizontally with a strip of proscuitto and skewer to secure. Brush the figs with oil and place on the grill. Cook, just until grill marks begin to appear, about 1 1/2 minutes. Turn and repeat with opposite side.

Time 25m

Yield 12 serving(s)

Number Of Ingredients 6

24 firm genoa figs or 24 black mission figs, stems removed
8 ounces gorgonzola, cut into 24 cubes
24 thin slices prosciutto
2 tablespoons olive oil
2 tablespoons balsamic vinegar, 12-18 yr
sea salt

Steps:

  • Preheat the grill to high or the oven to 450˚.
  • Rinse the figs and pat dry. With a paring knife cut a small slit in the bottom of each fig. Insert a cube of cheese and with your fingers gently squeeze the opening closed. Wrap one slice of prosciutto around each fig, rolling the fig to blanket it completely. Repeat with the remaining figs and place on the grill. With the lid close, grill until the figs are browned on one side, about 4 minutes. Flip the figs and repeat.
  • Alternatively, preheat the broiler to high and place the figs in a roasting pan. Broil until browned, about 2 minutes. Flip the figs and broil another 2 minutes or until golden brown and soft.
  • Place the warm figs on a serving platter and drizzle with the oil and vinegar. Sprinkle with the salt to taste. Serve immediately.

Tips:

  • Choose ripe, firm figs for the best flavor and texture.
  • Wrap the figs tightly with prosciutto so that they are completely covered.
  • Grill the figs over medium heat until the prosciutto is crispy and the figs are slightly softened, about 5 minutes per side.
  • Serve the figs immediately with blue cheese, pecans, and honey.
  • You can also stuff the figs with a mixture of goat cheese, chopped walnuts, and dried cranberries before wrapping them with prosciutto.
  • For a vegetarian version of this recipe, omit the prosciutto and wrap the figs with puff pastry instead.

Conclusion:

Grilled Prosciutto Wrapped Figs with Blue Cheese and Pecans are a delicious and elegant appetizer that is perfect for any occasion. They are easy to make and can be prepared ahead of time, making them a great option for busy hosts.
