2 large sweet red peppers, halved and seeded
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon minced fresh rosemary
2 packages (8 ounces each) cream cheese, softened
2/3 cup finely chopped oil-packed sun-dried tomatoes
2 garlic cloves, minced
1 teaspoon onion salt
2 cups crumbled feta cheese
Pita chips

Steps:

  • Toss peppers with oil, garlic powder and rosemary to coat. Grill peppers, covered, over medium-high heat or broil 4 in. from heat 2-3 minutes on each side or until tender. Cool completely. Cut peppers into 1/4-in. pieces., In a large bowl, beat cream cheese, sun-dried tomatoes, garlic and onion salt until blended. Beat in feta cheese and chopped red peppers until blended. Serve with pita chips. Refrigerate leftovers.

2 slices whole-grain bread
1 teaspoon salted butter
1 oz Brie cheese, rind removed
2 tablespoons crumbled blue cheese
1 teaspoon raspberry preserves

Steps:

  • Spread 1 side of each bread slice with butter. Place 1 slice, buttered side down, in small skillet. On same bread slice, carefully spread Brie (it helps to slice it a bit). Sprinkle with blue cheese. Spread raspberry preserves on unbuttered side of second bread slice. Place slice, buttered side up, on cheese-topped slice.
  • Cook over medium heat about 5 minutes or until bottom is golden brown. Carefully turn; press down lightly. Cook 2 to 3 minutes longer or until cheese is melted and bottom is golden brown.

1 cup raspberry vinaigrette
2 tablespoons chopped fresh rosemary, divided
6 skin-on chicken thighs
6 chicken drumsticks
½ cup seedless raspberry jam
4 ½ teaspoons raspberry vinaigrette
1 ½ teaspoons lime juice
½ teaspoon soy sauce
⅛ teaspoon garlic powder

Steps:

  • Combine 1 cup vinaigrette and 1 tablespoon rosemary in a large resealable plastic bag. Add chicken thighs and drumsticks. Seal bag and turn to coat. Refrigerate for 1 hour.
  • Combine remaining rosemary, raspberry jam, 4 1/2 teaspoons vinaigrette, lime juice, soy sauce, and garlic powder in a small bowl.
  • Prepare an outdoor grill for indirect medium heat and lightly oil the grate.
  • Drain and discard the marinade. Place chicken pieces skin-side down on the grill rack. Grill, covered, over indirect heat for 20 minutes. Flip. Grill, basting occasionally with raspberry jam mixture, until a meat thermometer inserted into the center reads 180 degrees F (80 degrees C), 10 to 20 minutes more.

1 lb cottage cheese
1 1/2 cups cheddar cheese, shredded
2 teaspoons cornstarch
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1 peach, finely chopped
1/2 cup raspberries
1 green onion, thinly sliced
1 tablespoon fresh dill, chopped
1 loaf round bread

Steps:

  • In food porcessor, puree cottage cheese until smooth. Pulse in the next 4 ingredients until combined.
  • Scrape into saucepan and add the peach, raspberries, green onion and dill. Stir to combine. Heat over medium-low heat, stirring gently for 5 minutes or until warm.
  • Cut 7-inch circle in top of loaf and remove the bread. Place on large piece of foil and cut remaining bread into bite sized cubes.
  • Pour warm cheese mixture into bread. Place bread onto grill over medium heat and close lid.
  • Grill for about 5 minutes or until cheese mixture and bread are golden.
  • Serve with bread, crackers and vegetables.
