GRILLED RED SNAPPER WITH STRAWBERRY AVOCADO SALSA
Sweet fresh strawberries and lucscious avocado provide a nice balance to tange jalapeno pepper, red onion, cilantro and lime. We love red snapper, but salmon, swordfish, or tuna filets works equally well here. Scoop up any extra salsa with tortilla chips. (Taken from www.wholefoodsmarkets.com)

Tips:
- Choose the right snapper. Look for a fish that is firm to the touch and has clear eyes. Avoid any fish that has a slimy or dull appearance.
- Score the snapper before grilling. This will help the fish cook evenly and prevent it from curling up.
- Season the snapper liberally. Use a combination of salt, pepper, garlic powder, and paprika. You can also add other herbs and spices, such as oregano, thyme, or cumin.
- Grill the snapper over medium heat. This will help the fish cook through without burning it.
- Flip the snapper halfway through cooking. This will ensure that both sides of the fish are cooked evenly.
- Cook the snapper until it is flaky and opaque. This should take about 10-12 minutes per side.
- Squeeze some lemon juice over the snapper before serving. This will brighten up the flavor of the fish.
