GRILLED WATERMELON AND TOMATO SALAD

Grilled Watermelon and Tomato Salad image

This salad is an ode to summer. I love to grill the watermelon after it's been brushed with a little bit of the honey-lime vinaigrette. The sugars from the melon caramelize nicely on the grill and add the best smoky flavor.

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 15

2 large cloves garlic
1 large shallot, halved
2/3 cup olive oil
1/4 cup honey
Zest of 1 lime (about 1 teaspoon)
1/4 cup fresh lime juice (from 2 to 3 limes)
Kosher salt and freshly ground black pepper
2 tablespoons salted butter
1 cup pecan halves
2 tablespoons light brown sugar
1 small seedless watermelon (about 9½ pounds)
One 5-ounce container baby arugula
One 16-ounce container Campari tomatoes, cut into wedges
4 ounces feta cheese, crumbled
1/4 cup thinly sliced red onion

Steps:

  • Make the honey-lime vinaigrette: Add the garlic and shallot to a food processor and pulse until minced. Turn off the motor and add the oil, honey, lime zest and lime juice. Process until smooth. Season with salt and pepper. Set aside.
  • Make the salad: Line a baking sheet with parchment paper and set aside. Melt the butter in a large skillet over medium heat. Add the pecans and brown sugar and cook, stirring to coat, until the sugar begins to caramelize, about 3 minutes. Spread the pecans onto the prepared baking sheet and let cool completely, about 20 minutes.
  • Meanwhile, trim the ends from the watermelon. Stand the watermelon on a cutting board, flat-side down, and cut into quarters. Set aside 2 quarters for another use. Cut the remaining 2 quarters crosswise into 1-inch-thick slices. Brush 2 tablespoons of the vinaigrette onto the slices.
  • Preheat a grill to medium-high heat or place a grill pan over medium-high heat until hot. Grill the watermelon slices, in batches, in a single layer until warmed through and grill marks appear, 2 to 3 minutes per side. Remove the watermelon from the grill and let cool, about 15 minutes. Cut into bite-size cubes.
  • Arrange the arugula, grilled watermelon, tomatoes, feta cheese, pecans and red onion on a platter or in a salad bowl. Drizzle the remaining vinaigrette over the top and toss just before serving.

SEASONAL SALAD WITH HERB VINAIGRETTE

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 6

2 tablespoons red wine or sherry vinegar, or a combination
1 small garlic clove, peeled
Salt
6 tablespoons extra-virgin olive oil
Pepper
6 large handfuls salad greens, about 3/4 pound

Steps:

  • Measure the vinegar into a small bowl. Crush the garlic clove and add it to the vinegar, along with 1/2 teaspoon salt. After 10 minutes or so, whisk in the olive oil and a little freshly milled pepper. Taste and adjust the seasoning. Make the vinaigrette no more than a couple of hours before serving.
  • Pick over the salad greens, discarding any tough outer leaves, or any that are wilted or blemished. (If you are using young head lettuces, trim the root ends with a sharp paring knife to free the leaves.) Fill a large basin with cold water and gently submerge the greens, allowing sand and grit to sink to the bottom. Lift the lettuces from the water and drain them in a colander, then dry them in a salad spinner. Wrap the leaves in clean cotton toweling and refrigerater in an airtight container.
  • To serve, put the greens in a wide salad bowl and season with a small pinch of salt. Remove the garlic clove, whisk the vinaigrette, toss the greens lightly with just enough dressing to make the leaves glisten. (Your hands make the best salad-tossing tools.) Serve immediately with garlic toast or croutons.

GRILLED STEAK SALAD WITH VINAIGRETTE

Grilled Steak Salad With Vinaigrette image

I put this together for dinner tonight, and it was so good! It was very hearty and filling, with bread and cheese as an accompaniment. Amounts are just estimated guidelines. Use a good quality Dijon mustard, ideally a strong, but not too vinegary, mustard. Prep time is an estimated time for all the chopping etc listed in the ingredients. You can prepare the vegetables, steak, and vinaigrette in advance and refrigerate until ready to use--I'd say use the same day, though, or there will be some loss in quality.

1 lb sirloin steak
2 -4 tablespoons olive oil

  • Cut steak into bite-size pieces.
  • To assemble salad, place 2-3 cups of salad greens on each of 4 large plates. Place cucumber, bell pepper, artichoke hearts, and red onion rings on top. Divide steak among salads. Tips:

  • Grill the lettuce briefly. You don't want to overcook the lettuce, or it will become limp and wilted. Grill the lettuce for just a few minutes per side, or until it is slightly charred and softened.
  • Make a flavorful vinaigrette. The vinaigrette is what will really bring your grilled salad to life. Use a good quality olive oil and vinegar, and add in some fresh herbs, spices, and citrus juice to taste.
  • Add some grilled vegetables. Grilled vegetables are a great way to add extra flavor and nutrition to your salad. Try grilling some zucchini, eggplant, peppers, or mushrooms.
  • Top with a protein. If you want to make your salad a complete meal, add some grilled chicken, fish, or tofu.

Conclusion:

Grilled salad is a delicious and healthy way to enjoy your favorite summer vegetables. It's also a great way to get your kids to eat their greens. With a little planning and preparation, you can have a delicious grilled salad on the table in no time. So fire up the grill and get started!
