Resist the temptation to press down on the burgers with a spatula, which only spews juice and fat on the fire, causing the flames to flare up and the burger to lose flavor. If you feel your burger is cooking too quickly, use the cooler sides of the grill to rest them. And remember: lowering the top on the grill helps cheese melt.

3/4 pound ground pork
2 large eggs
2/3 cup graham cracker crumbs
1/3 cup packed brown sugar

1 tablespoon spicy brown mustard
1/4 teaspoon ground cloves
8 slices Swiss cheese (1 ounce each)
8 kaiser rolls, split
2 large tomatoes, cut in sixteen 1/4-inch slices
1/2 cup honey mustard salad dressing
1-1/2 cups fresh baby arugula, packed

  • Pulse ham in food processor until finely ground. Combine with pork, eggs, cracker crumbs, brown sugar, pineapple and juice, mustard and cloves. Mix lightly but thoroughly.   • Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 8 small piles of around 4 ounces each, and even more gently gather them together into orbs that are about 2 inches in height. Do not form patties.
  • Increase heat under skillet to high. Put half the orbs into the skillet with plenty of distance between them and, using a stiff metal spatula, press down on each one to form a burger that is around 4 inches in diameter and about 1/2 inch thick. Season with salt and pepper.
  • Cook without moving until patties have achieved a deep, burnished crust, a little less than 2 minutes. Use the spatula to scrape free and carefully turn burgers over. If using cheese, lay slices on meat.
