1 pound breakfast sausage
8 slices American cheese
4 potato buns, split and toasted
1 avocado, sliced
Kosher salt
4 over-easy fried eggs
Pickled Fresno chiles or cherry peppers, for topping, optional

Steps:

  • Preheat a grill to medium high.
  • Form the sausage meat into 4 patties. Use your thumb to make an indentation in the center of each patty so they don't curl up while cooking. Grill until cooked through or the internal temperature reaches 160 degrees F, 3 to 5 minutes per side, depending on thickness. Add 2 slices of American cheese to each patty and close the grill until melted, about 1 minute.
  • Place some avocado slices on the bottom buns and season with pinch of salt. Add a patty, then top with an egg and a few pickled Fresno chiles. Add the top bun and serve.

After a couple of tries, yielding rather bland tasting sausage, I realized that commercial sausage sits with its seasonings and preservatives, and possibly, flavor enhancers, in the grocer's refrigerator case for a long time. When you make this sausage, please don't skip the resting time in the refrigerator, because this allows the seasonings to bloom.

1 tablespoon rubbed sage
1 teaspoon kosher salt, or to taste
1 teaspoon dried parsley
½ teaspoon crushed red pepper flakes, or to taste
½ teaspoon fennel seeds
½ teaspoon ground black pepper, or to taste
½ teaspoon smoked paprika
½ teaspoon ground coriander
¼ teaspoon dried thyme
1 pound ground pork
1 tablespoon vegetable oil

Steps:

  • Stir sage, salt, parsley, red pepper, fennel, black pepper, smoked paprika, coriander, and thyme together in a small bowl.

3 lb breakfast sausage
12 eggs
½ cup milk

  • Preheat oven to 425˚F (220˚C).
  • In a large bowl, combine pancake mix, eggs and milk being careful not to over-mix.
  • Divide batter evenly onto two parchment paper-lined 17x11 inch baking sheets. Spread evenly and bake for 15 minutes.
