I was excited to find this recipe because it is similar to a dish I had at one of my very favorite places here. It's a great Scottish pub. Taken from 'Potatoes Mashed and More'.

8 links speciality sausages
2 onions, cut into wedges, roots left intact
2 lbs potatoes, scrubbed and quartered
6 tablespoons butter
1 tablespoon coarse grain mustard
3 teaspoons prepared English mustard
1 garlic clove, crushed (more, please)
1 bunch fresh parsley, chopped
olive oil
salt and pepper

Steps:

  • First make the mustard mashed potatoes. Cook the potatoes in a large saucepan of boiling water for about 20 minutes, or until tender.
  • Place the sausages on a preheated ridged grill pan and cook for 10 minutes, turning them to get an even color. Add the onion wedges and cook with the sausages for 6-7 minutes.
  • Meanwhile, drain the cooked potatoes well and return them to the pot. Place over a low heat and allow any excess water to steam away without coloring the potatoes. Remove from heat, then, holding the warm potatoes in a dish towel, peel them carefully. You should be able to squeeze the skins off through the towel. Place in a bowl. Mash well, using a potato masher or fork. Add the butter, wholegrain and English mustards, garlic, and salt and pepper and continue to mash. Taste the potato and add more mustard, or salt and pepper, if desired. Finally, stir in the parsley and a dash of olive oil.
  • Serve the mashed potatoes and sausages together with the onion wedges.

Sausage, Peppers and Sweet Potatoes:
2 large Florida potatoes, cut into 3/4-inch slices
2 large Florida sweet potatoes, cut into 3/4-inch slices
2 pounds spicy smoked cooked sausage, cut into 2-inch pieces
2 tablespoons vegetable oil
1 tablespoon grill seasoning
2 Florida bell peppers, sliced
1/2 cup scallions, sliced
1/4 cup fresh Florida parsley, finely chopped
Assorted fresh herbs, for garnish

Steps:

  • For the mustard vinaigrette: Add the vinegar, honey, mustard, hot sauce, garlic and lemon juice to a medium mixing bowl. Whisk constantly while slowly adding the vegetable oil. Whisk until fully combined. Taste the vinaigrette and season with salt and black pepper.
  • For the sausage and peppers: Bring a medium pot of lightly salted water to a boil. Add the potatoes and sweet potatoes and boil until they are almost cooked, but still raw in the center, about 5 minutes. Drain and cool them completely until ready to grill.
  • Preheat a char-grill to medium-high heat
  • Combine the potatoes, sausages, oil, grill seasoning and bell peppers in a large bowl. Toss carefully until well coated. Grill the sausages, peppers and potatoes until char marks have formed and everything is completely heated through, about 6 minutes.
  • Remove and arrange on a platter. Drizzle with some of the mustard vinaigrette. Serve extra vinaigrette on the side.
  • To serve, garnish with scallions, parsley and fresh herbs. Serve warm.

English mustard, to serve
1 1/2 lbs onions, sliced thinly
1 pinch sugar
2 tablespoons sunflower oil
1 ounce butter
1 teaspoon plain flour
2 1/4 cups brown ale
2 1/4 cups beef broth
1/2 star anise
2 cloves
2 fresh bay leaves
2 lbs potatoes, peeled and cut into chunks
2 ounces butter
2 -3 tablespoons milk

Steps:

  • To make the beer and onion gravy, heat the oil and the butter in a large, heavy based saucepan.
  • Add the onions and sugar and cook over a low heat for 45 minutes, stirring now and then, until soft and richly caramelised.
  • Stir in the flour and cook for 1 minute.
  • Stir in the beer, beef broth, star anise, cloves and bay leaves and boil vigorously until reduced to a rich, glossy sauce - about 20 minutes in a large sauté pan.
