MANGO SHRIMP IN ENDIVE LEAVES image

1/2 pound cooked peeled and deveined shrimp, chopped
1/2 mango, finely diced (about 1 cup)
2 tablespoons chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon fresh lime juice
2 teaspoons grated fresh ginger
kosher salt and black pepper
24 endive leaves (from about 3 heads)

Steps:

  • 1. In a medium bowl, combine the shrimp, mango, cilantro, oil, lime juice, ginger, 1/4 teaspoon salt, and 1/8 teaspoon pepper. 2. Spoon the shrimp mixture into the endive leaves.
