30 medium red new potatoes
Salt
Canola oil
3 pounds shiitake mushrooms, stems removed, halved and thinly sliced
5 cloves garlic, crushed and pasted with salt
2 shallots, minced
Freshly ground black pepper
3 to 5 sprigs fresh thyme, leaves removed and chopped
2 to 3 tablespoons chopped fresh parsley
Two 10-ounce logs goat cheese, crumbled
Red wine vinegar
Extra-virgin olive oil
Fresh chervil, for garnish

Steps:

  • Add the potatoes to a large pot, cover by 2 inches with water, season with salt and bring to a boil. Boil until the potatoes are just fork tender but firm, about 10 minutes. Drain and set aside to cool.
  • In the meantime, coat a large saute pan with canola oil and set over medium-high heat. Add the shiitakes, garlic paste and shallots. Season with salt and pepper and saute until the mushrooms are golden and tender, 7 to 10 minutes. Just before the mushrooms are ready, toss in the thyme and parsley. Remove the mixture from the heat and allow to cool.
  • Heat a grill to high.
  • Now, slice your cooled potatoes into 1/2-inch rounds. Drizzle them with a bit of canola oil and sprinkle with salt and pepper. Grill the potatoes until marked and cooked through, 2 to 3 minutes per side.
  • Toss the cooled mushroom mixture with the goat cheese. Add some red wine vinegar, extra-virgin olive oil and salt and pepper. Top each piece of grilled potato slice with a spoonful of the mushroom mixture. Garnish with chervil.

5 large shiitake mushrooms, stems removed
6 tablespoons canola oil
Salt and freshly ground black pepper
1 teaspoon whole-grain mustard
3 tablespoons balsamic vinegar
3 tablespoons extra-virgin olive oil
4 tablespoons finely chopped flat-leaf parsley, plus torn leaves for garnish
4 bone-in, skin on chicken breasts (about 8 ounces each)

Steps:

  • Heat the grill to high.
  • Brush both sides of the mushroom caps with 4 tablespoons of the canola oil and season with salt and pepper. Place on the grill, cap side down and grill until golden brown and slightly charred, 4 to 5 minutes. Turn the mushrooms over and continue cooking until just cooked through, 3 to 4 minutes longer. Remove from the grill and coarsely chop.
  • Whisk together the shallots, vinegar, extra virgin olive oil and parsley in a medium bowl until combined and season with salt and pepper. Add the mushrooms and stir to coat. Let sit at room temperature for at least 15 minutes before serving.

Steps:

  • Preheat oven to 400 degrees.

1/4 cup balsamic vinegar
1/2 cup extra-virgin olive oil
2 tablespoons chopped fresh rosemary, plus twelve 10-inch stems for skewering
Coarse salt and freshly ground black pepper
48 2- to 2 1/2-inch-diameter (about 1 3/4 pounds) shiitake mushrooms, cleaned and stemmed

Steps:

  • Place vinegar in a small bowl; whisk in oil. Add rosemary, 1/2 teaspoon salt, and 1/4 teaspoon pepper. In a shallow nonreactive dish, arrange mushrooms, stem-side down, in an even layer. Brush each mushroom cap with marinade, and set aside. Cover with plastic wrap, and let stand at room temperature for 15 to 20 minutes.
  • Trim rosemary sprigs to a length to hold two mushroom caps, leaving about 1 inch of the skewer exposed. Thread rosemary, stem-end first, crosswise through the mushrooms, removing rosemary needles if needed to skewer. Heat a grill pan over medium-high heat until warm.   • Preheat charcoal or gas-fired grill.

12 shiitake mushrooms, 1 1/2 to 2 inches across
2 tablespoons soy sauce
2 tablespoons oriental sesame oil
2 tablespoons olive oil, about 1/2 pound
4 teaspoons roasted sesame seeds
2 teaspoons sugar
1 bunch arugula, stems removed

Steps:

  • Prepare the seasoning sauce by combining the soy sauce, sesame oil, olive oil, and sugar. Can be prepared up to a week ahead.
  • Preheat the broiler.
  • Wash the arugula and spin dry. Clean the mushrooms and remove the stems. Place them cup side up on a broiling rack.

2 (1 1/4-1 1/2 lb) flank steaks, fat trimmed
1/2 cup soy sauce
1/2 cup oriental sesame oil
1/2 cup soy sauce
3 tablespoons red wine vinegar
fresh ground pepper
2 medium garlic cloves, crushed
1 lb fresh shiitake mushroom, discard stems
3 tablespoons unsalted butter
3 tablespoons vegetable oil
2 cups unsalted beef stock (or more)
4 teaspoons Dijon mustard
4 teaspoons coarse grain mustard
1/2 cup heavy cream
salt & freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon vegetable oil

  • Steaks;.
  • Place steaks in non aluminum pan (or ziploc bag) .
  • Whisk soy sauce,sesame oil, vinegar and generous amount of pepper in medium bowl; mix in garlic.

  • Add 1 cup stock, 1/4 cup at a time, boiling until sauce is reduced by half after each addition.
  • Stir in cream and boil until sauce coats spoon, about 3 minutes.
  • *This can be prepared 1 day ahead. Chill sauce and reserved mushrooms separately.
  • Prepare barbeque grill (high heat). Steaks can also be cooked in broiler.
  • Remove steaks from marinade and arrange on grill rack.
  • Cook about 4 minutes per side for medium-rare.
  • Transfer to platter and let rest 5 minutes.
  • Reheat sauce over low heat, stirring occasionally.
  • Melt 1 tablespoon of butter with 1 tablespoon oil in heavy small skillet over high heat.
  • Add reserved mushroom caps and cook until heated through, about 2 minutes per side.
  • Drain mushroom caps on paper towels.
  • Cut steaks across grain diagonally into 3/8-inch slices and arrange in circular pattern on heated platter.

1 1/2 tablespoons dry Sherry
1 tablespoon soy sauce
1 tablespoon minced peeled fresh ginger
1 1/2 teaspoons rice vinegar (not seasoned)
1/2 teaspoon sugar
2 1/2 tablespoons vegetable oil
1 1/2 lb large fresh shiitake mushrooms (3 inches wide), stems cut off and discarded
1/2 teaspoon salt
1/2 teaspoon black pepper
2 scallions, cut into very thin strips (2 inches long)

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). (If using a charcoal grill, open vents on bottom of grill, then light charcoal. When Charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows: Hot: When you can hold your hand there for 1 to 2 seconds; Medium-hot: 3 to 4 seconds; Low: 5 to 6 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.)
  • While coals are lighting, stir together Sherry, soy sauce, ginger, vinegar, sugar, and 1/2 tablespoon oil in a large bowl until sugar is dissolved.
  • Toss mushrooms with salt, pepper, and remaining 2 tablespoons oil, then grill on lightly oiled grill rack, covered only if using a gas grill, turning over occasionally, until lightly browned and tender, 4 to 6 minutes total. Transfer mushrooms with tongs to bowl with sauce, then add scallions and toss until combined.
