MUSHROOMS AND ONIONS FOR STEAK

Mushrooms and Onions for Steak image

This is how I sauté mushrooms and onions to serve with grilled steak. I've been doing it this way for years and never really thought of it as a recipe until today when my husband mentioned that it was the best he'd ever had. If you have leftovers, make an omelet with them with smoked swiss cheese and serve with hot, steaming bowls of tomato soup with basil. Just trust me on that.

Provided by Hey Jude

Categories     Onions

Time 40m

Yield 4 serving(s)

Number Of Ingredients 6

1/2 lb sliced mushrooms (I use crimini but white work as well)
1 medium onion, sliced into wedges
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic salt

  • Melt the butter and olive oil together in a frying pan and add the mushrooms and onions; let them cook slowly, over medium heat, until the mushrooms are getting a little brown and the onions are nice and soft, about 20 minutes.
  • While there's still some moisture left from the mushrooms, add the Worcestershire sauce and garlic salt.
  • The mixture will thicken and it's ready to serve.
  • Serve with grilled steak and use leftovers for omelets.
  • Makes 4 servings if served with steak.

GRILLED STURGEON WITH MUSHROOM SAUTE RECIPE

Grilled Sturgeon with Mushroom Saute Recipe image

Provided by á-32

Number Of Ingredients 17

The Grilled Sturgeon:
4 sturgeon fillets (6 to 7 ounces)
1 tablespoon minced fresh garlic
2 tablespoons olive oil
1 teaspoon course ground black pepper
pinch of kosher salt or sea salt
The mushroom & thyme saute:
1/2 cup button mushrooms (sliced)
1/2 cup shitake mushrooms (sliced)
1/2 cup oyster mushrooms (sliced)
1/4 cup of shallots (sliced)
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 teaspoon fresh thyme
1/4 cup chicken or vegetable stock (canned)
2 tablespoons dry white wine
pinch of salt and ground black pepper

Steps:

  • Clean the grill well before getting it hot, this will help insure the fish will not stick while cooking. Start with a grill brush and remove any burnt on material. After words with an old towel that has been slightly oiled with plain vegetable oil rub the grill down. This is what chef's call "seasoning the grill". Next head the grill on high while you prepare the sturgeon. Remove the skin from the sturgeon and place in a large stainless steel bowl. Add the olive oil, garlic, course black pepper and salt. Mix the seasonings into the fish to coat. Prepare the mushroom saute by heating a large saute pan on high. Add the olive oil and add the sliced mushrooms and shallots just as the oil begins to smoke. Saute the mushrooms and shallots for about 1 minute and add the whole butter followed by the fresh thyme and salt and pepper. Place the sturgeon on the grill and reduce the heat to a medium setting. Close the grill and leave the fish as is for 2 minutes. While the fish is cooking add both the stock and white wine to the mushroom mixture and continue to cook to reduce the liquid. Flip the fish after two minutes of cooking and cook another minute *or until the fish reaches an internal cooking temperature of 145 degrees. Remove the grilled fish and plate, top with the mushroom and shallot mixture and enjoy. This recipe is excellent with roasted potatoes, yams or a rice blend.

Tips:

  • Choose the freshest sturgeon available: Look for fish with bright, clear eyes, firm flesh, and a mild, briny smell.
  • Prepare the sturgeon properly: Before cooking, rinse the fish thoroughly and pat it dry. Remove any bones or scales, and score the skin to help the marinade penetrate.
  • Use a flavorful marinade: A good marinade will help to infuse the sturgeon with flavor and moisture. Try using a combination of olive oil, lemon juice, herbs, and spices.
  • Cook the sturgeon over medium heat: This will help to prevent the fish from drying out. Cook the fish until it is opaque and flakes easily with a fork.
  • Serve the sturgeon with a variety of sides: Grilled sturgeon pairs well with roasted vegetables, steamed rice, or a simple salad.

Conclusion:

Grilled sturgeon is a delicious and healthy meal that is perfect for any occasion. By following these tips, you can ensure that your grilled sturgeon turns out perfectly every time.
