1 pound skinless, boneless chicken breast halves
4 (7 inch) corn tortillas
4 cups shredded lettuce

1 avocado - peeled, pitted, and sliced
1 lime, cut into wedges
¼ cup sour cream

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix black beans, salsa, 1/2 cup cilantro, and lime juice in a bowl; set aside.
  • Stir chili powder, cumin, coriander, brown sugar, cayenne pepper, and olive oil in a bowl until smooth; rub mixture over chicken breasts.
  • Cook chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 10 to 12 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). I've search high and low on the internet. I've dug deep. I've looked in every recipe site I could find. Yet somehow, no one on the internet has posted a recipe for Taco Bell's chicken burritos. You know, the ones with the avocado ranch sauce. The most delicious item on the Taco Bell menu. Somehow, this great oversight has gone unnoticed by anyone but me. No longer. Here is the recipe. (Note: very few of the amounts are exact. I'm estimating. I didn't measure. Usually if you estimate with this blend it will be okay).

3 chicken breasts
1 tablespoon paprika
1 tablespoon cumin
1/2 tablespoon chili powder
1 teaspoon cayenne pepper
2 teaspoons garlic powder
1 teaspoon salt
6 ounces enchilada sauce
2 cups uncooked medium grain rice
4 cups water
1 avocado
1 lime
salt
1/3 cup ranch dressing, depending on the size of your avocado
1 cup grated cheddar cheese, to taste
10 -16 tortillas (varies by size)

Steps:

  • Pound out the chicken breasts until they're thin and flat. Sprinkle most of the spice mixture evenly over the chicken breasts. Make sure they're well-seasoned.
  • Meanwhile, cook the rice in a pot or rice cooker (the latter produces better results). Once it's done, mix it with the remainder of the spices and the enchilada sauce.
  • Grill the chicken; allow to cool and slice.
  • Mash the avocado and mash in the ranch dressing, salt, and lime juice.
  • Warm however many tortillas you wish to make burritos with.
  • To construct a burrito, lay out a tortilla and spoon on some of the avocado sauce. Spread it over the middle of the tortilla. Then spoon on a few tablespoons of the rice, followed by a sprinkling of cheddar cheese. Place the chicken on top of the cheese, add more avocado sauce to taste, and roll up the burrito. (Lime juice and salsa verde are also wonderful on this if you wish.).
  • Microwave the final burrito for about 20 seconds just to make sure everything is warm. Enjoy! They taste incredibly like Taco Bell's.

1/4 cup canola oil, plus more for brushing dough
2 to 3 tablespoons Big Daddy's Taco Rub, plus more for seasoning, recipe follows
1 (16-ounce) tube pizza dough, store-bought
Flour, for work surface
1 cup shredded mozzarella
1 cup shredded sharp Cheddar
1 cup Guacamole, recipe follows
1 cup Lime Chipotle Salsa, recipe follows
1/2 cup sour cream
1/4 cup chopped fresh cilantro leaves
1 tablespoon freeze-dried onions
1 tablespoon freeze-dried garlic
1 teaspoon freeze-dried oregano
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon coarsely ground black pepper
1 teaspoon cayenne
1 teaspoon ground cumin
1 tablespoon salt
1 tablespoon chili powder
1 avocado, halved, pitted and flesh diced small
1 lime, juiced
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 tablespoon finely diced red onions

2 plum tomatoes, finely diced

Steps:

  • Preheat grill to medium-high heat.
  • Pound out chicken breast between 2 pieces of plastic wrap and place in a shallow dish. Combine the oil and Taco Rub in a small bowl and sprinkle over the chicken. Let marinate for 30 minutes. Grill chicken on both sides until cooked through, about 8 minutes total. Transfer to a cutting board and allow to cool. Dice chicken into bite-sized pieces and set aside.
  • Cut pizza dough into 3 even pieces. On a lightly floured work surface, roll out each piece until it's very thin. Brush the dough with olive oil and lightly dust with Taco Rub. Grill on both sides until crisp and set aside.
  • In a medium bowl, mix mozzarella and Cheddar cheeses.
  • Evenly distribute 1/3 of the mozzarella and Cheddar cheese mixture on each pizza. Then top with 1/3 of the diced chicken. Return pizzas to the grill, cover and cook until cheese is bubbly and melted. Remove from grill. and place on serving plates. Top the pizzas with Guacamole, and Lime Chipotle Salsa, in desired amounts. Dollop sour cream on top and garnish with chopped cilantro.
  • In a small bowl, mix all ingredients together and reserve. Can be stored, covered, up to 1 month in a sterilized container.

1/4 cup lime juice
1/4 cup vegetable oil
1 (1 oz) packet taco seasoning (or 2 tablespoons of homemade taco seasoning)
1 garlic clove, minced
1/2 teaspoon cumin

Steps:

  • In a gallon-sized resealable bag, pour in lime juice, vegetable oil, taco seasoning, garlic, and cumin. Mix well and then add chicken breasts. Place in fridge and let marinate for at least 30 minutes (although I highly recommend a at least 4-6 hours).
  • Remove chicken from marinade and discard marinade. Place chicken on a grill heated to medium-high heat. Let chicken cook until it is no longer pink on the inside (and has reached an internal temperature of 165 degrees F), turning as needed.

1 pound skinless, boneless chicken breasts
1 16-ounce tube pizza dough
All-purpose flour, for dusting

1 avocado
Juice of 1 lime
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 tablespoon diced red onion

Steps:

  • Make the taco seasoning: Mix all of the ingredients with 1 tablespoon each salt and black pepper in a bowl.
