GRILLED GARLIC POTATOES

Grilled Garlic Potatoes image

This grilled potato recipe is so moist and delicious. It goes great with any meal or on its own, but my favorite is with steak. The cheese tops it off perfectly. Add mushrooms and carrots for an excellent variation. Delicious with sour cream on the side.

GRILLED TATERS

Grilled Taters image

I can't think of a better way to make potatoes. These are buttery, a little crisp, and perfect with My Favorite Burgers (also on Zaar). They require Paula Deen's House Seasoning (I have provided the recipe below). You will have way more seasoning than you need for this recipe, but it's great to keep in a shaker next to your stove (it's a perfect seasoning on everything!).

Yield Makes about 8 slices

Number Of Ingredients 8

twelve 7- to 8-inch flour tortillas
1 1/2 pounds red onions, chopped fine (about 3 cups)
2 tablespoons olive oil
3/4 cup minced fresh parsley leaves
1/3 cup freshly grated Parmesan cheese
3/4 cup mayonnaise
1 tablespoon balsamic vinegar
about 3 dozen wooden picks

Steps:

  • Prepare grill
  • On a rack set about 5 inches over glowing coals toast tortillas lightly a few at a time, turning them once, until they begin to puff on each side but are still soft. Alternatively, tortillas may be toasted on a stove-top griddle over moderately high heat.
  • In a large non-stick skillet cook onions in oil over moderately low heat, stirring occasionally, until soft, about 15 minutes. Transfer onions to a bowl and cool. Stir in parsley, Parmesan, 1/2 cup mayonnaise, and salt and pepper to taste.
  • Spread onion mixture on 11 tortillas, stacking them, and top the stack with remaining tortilla. Wrap cake well in plastic wrap and chill at least 1 hour and up to 4 hours.
  • Discard plastic wrap and with large sharp knife cut cake into 3/4-inch-wide slices (not wedges). Turn each slice onto its side and secure ends and middle with wooden picks.
  • In a small bowl stir together vinegar and remaining 1/4 cup mayonnaise and brush some of mixture on a cut side of each slice.
  • Grill slices, mayonnaise sides down, until golden brown, 3 to 4 minutes. Brush tops with remaining mayonnaise mixture, turn slices, and grill until golden brown, 3 to 4 minutes more.
  • Alternatively, broil slices on rack of broiler pan about 4 inches from heat, mayonnaise sides up, until golden brown, 3 to 4 minutes. Turn slices and brush tops with remaining mayonnaise. Broil until golden brown, 3 to 4 minutes more.

GRILLED ONIONS AND POTATOES

Grilled Onions and Potatoes image

My family loves these tasty potatoes. There are never leftovers. Once the potatoes are all tucked in their foil packets, they can wait overnight to be grilled the next day. Great for camping. Check foil packets at 15 and 30 minutes to ensure they are not burning. May require a few more minutes to ensure all is cooked through.

GRILLED BROCCOLI AND LEMON WITH CHILE AND GARLIC

Grilled Broccoli and Lemon With Chile and Garlic image

Alongside piles of roasted eggplant, the charred broccoli salad has become somewhat of a mascot on the salad display at Ottolenghi restaurants and delis throughout London. So much so, in fact, that it can't be removed from the menu, let alone tampered with. But here, the favorite is played with: Charred lemons and anchovies, savory with umami, add sourness and funk. Serve this alongside your protein of choice, or as part of an al fresco spread.

Time 45m

Yield 4 servings

Number Of Ingredients 9

Salt
2 small or medium broccoli with stalks (about 1 ½ pounds/700 grams)
7 tablespoons/103 milliliters olive oil, plus more for grilling
1 large fresno chile, thinly sliced at an angle, seeds and all
6 garlic cloves, thinly sliced lengthways
5 to 6 anchovies packed in oil, drained
1 large lemon, cut into 8 thin rounds and seeded, the rest squeezed for 1 teaspoon juice
1 1/2 tablespoons flat-leaf parsley leaves, roughly chopped
Flaky sea salt, for serving

Steps:

  • Bring a large saucepan of well-salted water to a boil over medium-high. Keep a large bowl of ice water next to it. Meanwhile, trim the broccoli so 2 inches/5 centimeters of stalk remain attached. Cut the broccoli in half lengthwise, then cut each half lengthwise again to give you 4 wedges per head.
  • Blanch the broccoli by adding it to the boiling water and cooking for 3½ minutes, until softened. The stalks should retain a nice bite. Use a pair of tongs to remove the wedges and plunge them straight into the ice water to stop them from cooking further. Once completely cool, drain and dry them well, then place in a large bowl.
  • Meanwhile, add 6 tablespoons/89 milliliters of oil, the chiles and garlic to a small frying pan and place it over medium heat. Cook for 7 to 10 minutes, stirring occasionally, until the garlic is golden and the chiles start to become transparent. Use a slotted spoon to transfer the solids to a plate lined with paper towels and set aside to cool and crisp further.
  • Add the anchovies to the pan and place over low heat. Cook gently, stirring occasionally, for 10 minutes, until an anchovy is soft enough to be easily squashed with the back of a spoon. Set aside to cool completely.
  • Place a large, well-greased grill pan over high heat and ventilate your kitchen well. (See Tip for outdoor grilling.) Toss the broccoli gently with 1½ teaspoons olive oil. Once the pan is very hot, grill the broccoli in 2 batches, turning so that all the flat sides have nice grill marks, 6 to 8 minutes per batch. Transfer to a tray to cool down. Grill the lemon rounds for 1½ minutes per side, until nicely charred, then transfer to a chopping board. When cool enough to handle, finely chop the lemon (skin and all) and transfer to a small bowl along with the lemon juice, parsley and remaining 1½ teaspoons olive oil. Mix well and set aside.
  • Once the broccoli has cooled, top with the anchovy oil mixture and toss gently to combine. Arrange on a large serving platter and top evenly with the charred lemon mixture. Lastly, sprinkle over the fried chile and garlic and the flaked salt.

SMOKED TATERS

Smoked Taters image

This sounds like an odd thing to do, but it turns out really well. Can be done on any kind of smoker, including a stove top unit. Hickory works fine, but oak or applewood are better. (I am also putting up instructions for tomatoes and making chipotles at some time in the future. Stay tuned.)

Provided by Queen Dragon Mom

Categories     Low Protein

Time 50m

Yield 4 serving(s)

Number Of Ingredients 2

4 potatoes, bakers unpeeled
vegetable oil

Steps:

  • Fire up your smoker and do your normal smoking of what ever your main course is.
  • 45 minutes before your entree is done, place the potatoes on a wire rack that has been brushed with oil. Be sure they are in a single layer.
  • Put the rack in the smoker alongside the entree.
  • When your main is done, the potatoes will have a light, earthy smoke flavor and should be cooked through.
  • How done you want them is a judgment call on your part. It's according to taste. Same thing goes for the amount of smoke you put on the vegetables.

Tips:

  • Choose the right potatoes: For grilling, opt for firm and waxy varieties like Yukon Gold, Red Bliss, or fingerling potatoes. They hold their shape well and won't fall apart on the grill.
  • Cut the potatoes in uniform sizes: This will ensure that they cook evenly. Cut them into wedges, cubes, or slices, depending on your preference.
  • Parboil the potatoes (optional): Parboiling the potatoes before grilling helps reduce cooking time and gives them a tender-crisp texture. Simply bring a pot of water to a boil, add the potatoes, and cook for 5-7 minutes until tender but still slightly firm. Drain and let them cool slightly before grilling.
  • Use a grill basket: A grill basket makes it easy to flip and stir the potatoes without losing them through the grates. If you don't have a grill basket, you can use a large piece of foil or a cast iron skillet.
  • Toss the potatoes in oil and seasonings: Before grilling, toss the potatoes in olive oil, salt, pepper, and any other desired seasonings. This will help them brown and flavor them evenly.
  • Grill the potatoes over medium-high heat: This will give them a nice char and prevent them from sticking to the grill. Cook for 10-15 minutes, or until the potatoes are tender and slightly browned.
  • Serve immediately: Grilled potatoes are best served hot off the grill. Top them with your favorite garnishes like chopped parsley, crumbled bacon, shredded cheese, or sour cream.

Conclusion:

Grilled taters with onions and garlic are a flavorful and versatile dish that can be enjoyed as a side dish or a main course. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will love. So fire up your grill and give this recipe a try!
