When the tofu is cooking, I try not to leave the grill as the tofu sometimes can go from lightly charred to being overcooked and dark in a few minutes. I have included the time for marinating the tofu in the preparation time.

16 ounces extra firm tofu
1/2 cup teriyaki sauce
2 tablespoons honey
1 teaspoon sesame oil
2 garlic cloves, minced
1 -2 teaspoon gingerroot, peeled and grated, to taste
salt and pepper, to taste
2 -3 green onions, thinly sliced
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Coat grill rack throughly with nonstick cooking spray. Preheat grill to medium (300° to 350 ° F). Cut tofu into slices 1/2-inch thick. Place slices in a single layer in a shallow glass dish.

2 small zucchini
