Categories     Fish

Number Of Ingredients 12

1 lemon, finely zested
2 lemons, juiced
1/2 cup dry white wine
1 shallot, thinly sliced
Splash heavy cream
1 stick unsalted butter, at room temperature, cut into cubes
Salt and freshly ground black pepper
3 tablespoons olive oil
4 (8-ounce) tilapia fillets
1/2 pound orzo, cooked al dente
1/4 cup chopped fresh flat-leaf parsley leaves
1/4 cup drained capers

Steps:

  • Combine the lemon zest, juice, wine and shallot in a small saucepan over high heat and cook until reduced by half. Remove from the heat and let cool. Whisk together the butter and wine mixture in a small bowl and season with salt and pepper. Cover and refrigerate for 30 minutes. The butter can be made 1 day in advance and refrigerated. Bring to room temperature before serving. Heat the grill to high. Brush the fish on both sides with the oil and season with salt and pepper. Grill the fish for 3 to 4 minutes per side or until lightly golden brown and slightly charred. Toss the orzo with a few tablespoons of the butter and 2 tablespoons of the parsley and season with salt and pepper. Transfer the orzo to a platter. Remove from the grill and immediately place the fillets on the orzo and top each fillet with some of the butter and capers. Garnish with the remaining parsley.

Tips:

  • Choose fresh tilapia fillets: Look for fillets that are firm and have a mild, fresh smell. Avoid fillets that are slimy or have a strong fishy odor.
  • Marinate the tilapia: Marinating the tilapia in a mixture of olive oil, lemon juice, garlic, and herbs will help to infuse it with flavor and keep it moist during grilling.
  • Cook the tilapia over medium heat: Cooking the tilapia over medium heat will help to prevent it from drying out. If you cook it over high heat, it is likely to burn on the outside before it is cooked through in the center.
  • Use a non-stick grill pan: A non-stick grill pan will help to prevent the tilapia from sticking and breaking apart. If you do not have a non-stick grill pan, you can grease a regular grill pan with cooking spray.
  • Cook the tilapia until it is flaky: The tilapia is done cooking when it is opaque throughout and flakes easily with a fork.
  • Serve the tilapia immediately: Tilapia is best served immediately after it is cooked. You can garnish it with lemon wedges, fresh herbs, or a squeeze of lemon juice.

Conclusion:

Grilled tilapia with lemon butter capers and orzo is a delicious and healthy meal that is perfect for a weeknight dinner. The tilapia is flaky and flavorful, and the lemon butter caper sauce is rich and creamy. The orzo is a hearty and filling side dish that rounds out the meal. This recipe is sure to please everyone at the table.
