GRILLED TILAPIA WITH MANGO SALSA

Grilled Tilapia with Mango Salsa image

Don't let the list of ingredients fool you: this is super-easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer--both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

1 tablespoon butter
2 cups sliced baby portobello mushrooms (cremini)
1/2 cup sliced scallions
1/4 cup white wine
1/2 pint heavy cream
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Salt and black pepper
5 cups milk
1 cup quick-cooking grits

1/2 teaspoon salt
1/2 teaspoon black pepper
1 large bunch broccoli, sliced lengthwise (with stalks and florets intact)

Salt and pepper
6 (6-ounce) tilapia fillets
1/3 cup Jamaican jerk seasoning marinade

  • Grits: Bring milk to a boil. Gradually whisk in grits, butter, salt, and pepper. Stir constantly for about 3 to 5 minutes until grits thicken to desired consistency. Keep warm until ready to serve.

TILAPIA MARINADE

Tilapia Marinade image

This is my favorite way to make tilapia, especially because Costco has such a great deal on their packaged tilapia, (at least here in Arizona.) So this recipe is not only very yummy, it is very inexpensive. In fact, you probably have all of the ingredients in your kitchen. Enjoy!

Tips:

  • Pick the right tilapia. Look for firm, moist fillets that are free of any discoloration or odor.
  • Make a flavorful marinade. The marinade is key to infusing the tilapia with flavor. Use a combination of herbs, spices, and citrus juices to create a marinade that complements the delicate flavor of the fish.
  • Let the tilapia marinate for at least 30 minutes. This will give the marinade time to penetrate the fish and infuse it with flavor.
  • Grill the tilapia over medium heat. This will help to prevent the fish from sticking to the grill and will also ensure that it cooks evenly.
  • Cook the tilapia until it is opaque and flakes easily with a fork. This will ensure that the fish is cooked through but not overcooked.
  • Serve the tilapia immediately with your favorite sides. Grilled tilapia is a versatile dish that can be served with a variety of sides, such as roasted vegetables, rice, or salad.

Conclusion:

Grilled tilapia is a healthy and delicious meal that can be enjoyed by people of all ages. The marinade helps to infuse the fish with flavor, and the grilling process creates a slightly crispy exterior and a moist and flaky interior.
