Juice 1 lemon
2 tablespoons olive oil
2 large shallots, minced
1 small clove garlic, unpeeled and left whole
2 tablespoons butter
3 to 4 pounds sorrel
1/2 to 3/4 cup chicken stock
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the tuna steaks dry with paper towels. Squeeze lemon juice on both sides, brush with oil and set aside.
  • Preheat broiler to high.
  • Meanwhile, in a heavy saucepan or skillet, soften the shallots and the garlic in the butter. Add the sorrel and cook, stirring frequently, for one to two minutes.
  • Add the chicken stock and cook a further five minutes. Remove from the stove. Peel the garlic and add the flesh to the sorrel. Puree with the sorrel mixture in a blender or food processor.

2 shallots, minced
2 tablespoons unsalted butter
1/4 pound fresh sorrel leaves
1 1/2 cups chicken stock (preferably homemade)
Coarse salt and freshly ground pepper to taste
2 tunafish steaks (about 1 1/2 to 2 pounds)
2 tablespoons olive oil

Steps:

  • Soften the shallots in butter in a heavy nonaluminum saucepan. Remove the stems from the sorrel, shred the leaves and add them to the pan. Cook until wilted.
  • Add the chicken stock and bring to boil. Season to taste with salt and pepper and allow to simmer gently until thickened. If the sauce gets too thick, cover and keep warm. It can be thinned with more chicken stock.
  • Meanwhile, preheat broiler or coals. Brush the tuna with the oil and season with salt and pepper. 1 pound yellowtail fillet, sliced into 1-inch-thick strips

1 cup mayonnaise
2 cloves garlic, smashed to a paste with salt

1/4 cup fresh lemon juice
1 teaspoon chile-garlic sauce

  • Preheat a charcoal grill or kamado-style ceramic charcoal cooker for direct grilling over high heat.
