2 tablespoons fresh lime juice, from about 1 lime
2 tablespoons red wine vinegar
1/4 cup olive oil, plus more for brushing
Salt and freshly ground black pepper
1/2 cup finely chopped red onion
1/4 cup chopped fresh cilantro
2 serrano chiles, stemmed, seeded and finely chopped
2 cloves garlic, minced
1 (15-ounce) can white kidney beans, rinsed and drained
1 (15-ounce) can red kidney beans, rinsed and drained
3 zucchini, cut lengthwise into 1/2-inch thick slices

Steps:

  • Prepare a barbecue or grill pan to medium-high.

2 red peppers, cut in half horizontally, seeds removed, each half cut into thick rings
2 yellow peppers, cut in half horizontally, seeds removed, each half cut into thick rings
1 red onion, peeled, sliced into thick rings
3 courgettes, sliced diagonally into half-inch slices
2 large mushrooms, cut into thick slices
1 (400 g) can butter beans, drained, rinsed
20 cherry tomatoes, cut in half
1 bunch fresh basil leaf, torn
1 large handful fresh rocket
100 g feta cheese, crumbled
1 tablespoon balsamic vinegar
extra virgin olive oil, for drizzling
