Time 16m

Yield 4-6 serving(s)

Number Of Ingredients 4

1/3 cup olive oil
1/3 cup wine vinegar
1/3 cup herb seasoning mix (I use Herb Seasoning)
1 -2 medium zucchini, halved and cut lengthwise into 4 slices

Steps:

  • Mix all into a ziplock bag and maninate 2 hours (less or more).
  • Grill 2-3 minutes on each side.
  • Enjoy.

Tips:

  • Choose the right zucchini: Select firm, medium-sized zucchini with smooth, unblemished skin. Avoid zucchini that is too large or has blemishes, as these may be bitter.
  • Slice the zucchini evenly: Cut the zucchini into 1/2-inch thick slices to ensure even cooking. Thinner slices will cook too quickly and may burn, while thicker slices may not cook through.
  • Marinate the zucchini: Marinating the zucchini in a mixture of olive oil, herbs, and spices will help to infuse it with flavor and prevent it from drying out during grilling.
  • Grill the zucchini over medium heat: Preheat your grill to medium heat before grilling the zucchini. This will help to prevent the zucchini from sticking to the grill and will allow it to cook evenly.
  • Flip the zucchini halfway through cooking: Flip the zucchini slices halfway through the grilling time to ensure that they cook evenly on both sides.
  • Season the zucchini with salt and pepper to taste: Once the zucchini is cooked through, season it with salt and pepper to taste. You can also add additional herbs or spices, such as garlic powder, paprika, or chili powder, to taste.

Conclusion:

Grilled zucchini slices are a delicious and healthy side dish that can be enjoyed as part of a variety of meals. They are easy to make and can be grilled in just a few minutes.
