½ cup chopped green bell pepper
½ cup chopped sweet red pepper
1 small onion, chopped
½ cup chopped fresh mushrooms
½ cup chopped fresh spinach leaves
1 cup shredded Cheddar cheese
1 (6 ounce) can tomato paste
1 pinch garlic powder, or to taste
salt and ground black pepper to taste

  • Trim zucchini ends and cut in half lengthwise. Scoop out and reserve pulp, leaving a 1/2-inch shell.
