1 avocado (ripe)
1 garlic clove, minced
1 teaspoon lemon juice
1/3 cup sour cream
1/4 teaspoon onion powder
1/4 teaspoon hot sauce
2 tablespoons bacon, Crumbled, 2 strips or 2 tablespoons imitation bacon bits
1/4 cup cucumber, Finely Diced
2 sprigs cilantro (to garnish) or 2 sprigs fresh basil

Steps:

  • Pit, peel, and mash the avocado with a fork.
  • Blend in the lemon juice, blending well and then add the sour cream, blending well.

5 plum tomatoes, cored, seeded and finely diced

1 Tbs. lime juice
1 Tbs. olive oil
1 Tbs. tequila, optional

Steps:

  • For the Guacamole: Halve avocados, remove pits and scoop each half out of the skin with a metal soup spoon. Set up a wire rack over a mixing bowl. Press each avocado half down through the wire rack into the bowl, dicing it.Add remaining ingredients to avocado and gently mix it all together. Try not to make the avocado smooth from the mixing.
  • For the salsa: Heat oil in a saute pan. Add onions and saute for 2 minutes. Add garlic and bell peppers and saute until soft and fragrant. Add tomatoes and cumin and cook for 1 minute. Turn off heat and stir in black beans and cilantro. Season to taste with salt and pepper.
  • For the Pico de Gallo: Combine all ingredients in a medium mixing bowl. Cover and set aside to let flavors meld together.

2 tomatoes, diced
1 jalapeno pepper, seeded and minced

1 lemon, juiced
2 cups cottage cheese

  • Scoop flesh out of the avocado and place it in a medium size mixing bowl. Mash the avocado well. Add lemon juice to the avocado and mix well. 1 (4 ounce) can chopped green chilies, undrained
1 (16 ounce) container sour cream
1 package taco seasoning mix
3 ripe avocados, pitted and peeled
2 tablespoons lime juice or 2 tablespoons lemon juice
1/2 teaspoon seasoning salt
1/8 teaspoon garlic salt
shredded cheddar cheese
chopped tomato
sliced green onion
sliced green olives
sliced black olives

Steps:

  • In small bowl, combine refried beans and chilies and spread on large serving plate.
  • Combine sour cream and taco seasoning, spoon over bean mixture.

1/2 red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Steps:

  • 1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.) 2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours. Keep the tomatoes separate until ready to serve. Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste. 3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready. 4 Just before serving, add the chopped tomato to the guacamole and mix. Variations For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados. You don't need to have tomatoes in your guacamole. To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guacamole with a little cottage cheese added to it is my favorite.
