GUAM'S RED RICE

This was sent to me by a resident of Guam via an online gaming community. It is intended to be made in a rice cooker. Refer to your manufacturer's directions for the correct amount of liquid to use with this quantity of rice.

Time 1h5m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 tablespoons achiote seeds
1/2 teaspoon salt
2 tablespoons cooking oil or 1 tablespoon butter
1/2 cup chopped onion
2 cups water
2 cups rice
1/2 cup diced bacon (optional)

Steps:

  • Place the achiote seeds in 2 cups of water to soak, and lightly grind along the edge until the water is a deep red. The darker the water the darker shade of red the rice will be. **The water will stain most material so I recommend a clear glass and a stainless steel spoon.**.
  • After you have the desired color, filter the water through a cloth or fine sieve that will separate the colored water from any seeds and foreign material. Set the colored water aside.
  • Wash rice and drain. Place in a rice cooker with the achiote water from above (add extra water depending on the directions for your rice cooker), salt, onions, oil, and bacon, if using. Close the rice pot and push the start button.

Tips:

  • Choose the right rice: Use medium-grain rice for a fluffy, chewy texture. Short-grain rice can also be used, but it will be stickier.
  • Soak the rice before cooking: Soaking the rice helps to remove excess starch and results in a more tender texture. Soak the rice for at least 30 minutes, or up to overnight.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will distribute heat evenly and prevent the rice from sticking to the bottom of the pot.
  • Add the right amount of water: The general rule of thumb is to use 1 1/2 cups of water for every cup of rice. However, the amount of water you need may vary depending on the type of rice you are using and the desired consistency.
  • Bring the water to a boil before adding the rice: This will help to prevent the rice from sticking together.
  • Stir the rice once or twice during cooking: Stirring the rice too often can make it gummy. Just stir it gently once or twice to prevent it from sticking to the bottom of the pot.
  • Let the rice rest before serving: After the rice is cooked, let it rest for 5-10 minutes before serving. This will allow the rice to absorb any remaining moisture and fluff up.

Conclusion:

Red rice is a delicious and healthy alternative to white rice. It is a good source of fiber, protein, and antioxidants. Red rice can be used in a variety of dishes, from simple side dishes to hearty main courses. With a little planning and preparation, you can easily make delicious red rice at home.
