12 ounces concentrated frozen guava nectar
1 cup oyster sauce
1 cup sugar
1 cup catsup
1 cup soy sauce
1/2 teaspoon Chinese five spice powder
1 teaspoon salt
10 lbs chicken thighs

Steps:

  • Combine all ingredients except chicken in a 2 gallon zip loc bag and mix well.
  • Add chicken and seal bag.
  • Rub bag to evenly coat chicken pieces.
  • Refrigerate overnight, turning bag once or twice.
  • Keep refrigerated until prepared.
  • Grill or broil chicken until done.
  • Marinade is very sticky so line broiler pan with foil for easier cleanup.
  • Recipe can be halved but you can still use the whole can of guava nectar.

1 cup guava nectar
2 tablespoons rice wine vinegar
2 cloves garlic, minced
1/2 red onion, chopped fine
1 tablespoon ancho puree
1 tablespoon honey
Salt, to taste
Pepper, to taste
6-inch wooden skewers
2 pounds boneless chicken thighs

Steps:

  • Combine guava, vinegar, garlic, onion, ancho and honey in a small saucepan and reduce to 1/2 cup. Place 2 skewers through each thigh and season with salt and pepper. Brush with glaze and grill 4 minutes per side. Brush with glaze several times while on grill. Cut each thigh in half and serve.

1 broiler/fryer chicken (3 to 4 pounds), cut up
1/4 cup butter, melted
1 can (20 ounces) pineapple chunks
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 teaspoon salt
1/3 cup ketchup
1/4 cup cider vinegar
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
Pinch ground ginger

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking dish; drizzle with butter. Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine brown sugar, cornstarch and salt; stir in reserved pineapple juice until smooth. Add the ketchup, vinegar, chili powder, Worcestershire sauce, soy sauce and ginger. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over chicken., Cover and bake at 350° for 1 hour. Uncover and bake for 30 minutes. 1/3 cup(s) sugar
1/2 cup(s) shoyu or soy sauce
1/2 cup(s) oyster sauce
1/2 cup(s) catsup
6 ounce(s) frozen guava concentrate (pass-o-guava)
2 clove(s) garlic, minced or pressed
- green onion, minced
