1 1/4 sticks unsalted butter
6 cloves roasted garlic, pureed
Salt

12 slices French bread, cut 1/2-inch thick
6 slices aged provolone cheese, halved lengthwise, cut 1/4-inch thick
Steak, recipe follows
Parsley oil, recipe follows
1 boneless rib-eye, about 16 ounces
Olive oil
Salt
Freshly ground black pepper
1/4 cup finely chopped fresh flat-leaf parsley
1/2 cup canola oil
Salt
Pepper

Steps:

  • Heat the grill. Mix together the butter and garlic puree and season with salt and pepper.
  • Brush 1 side of the bread with a tablespoon of the butter and place on the grill, butter side down and grill until golden brown; turn over, top with the cheese and grill for 30 seconds longer or until the cheese melts.
  • Place the garlic bread on a platter and top the cheese with a few thin slices of the beef and drizzle with the parsley oil.
  • Remove the steak from the refrigerator 30 minutes before grilling. Heat grill to high.
  • Brush steak on both sides with oil and season with salt and pepper. Place on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn over and continue grilling to medium-rare doneness. Remove from the grill and let rest 5 minutes. Slice into 1/4-inch thick slices.

1 pound beef sirloin, cut into thin 2 inch strips
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon chili powder
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried thyme
½ teaspoon dried marjoram
½ teaspoon dried basil
3 tablespoons vegetable oil
1 onion, sliced
1 green bell pepper, julienned
3 ounces Swiss cheese, thinly sliced
4 hoagie rolls, split lengthwise

Steps:

  • Place the beef in a large bowl. In a small bowl, mix together salt, pepper, paprika, chili powder, onion powder, garlic powder, thyme, marjoram and basil. Sprinkle over beef.
  • Heat half of the oil in a skillet over medium-high heat. Saute beef to desired doneness, and remove from pan. Heat the remaining oil in the skillet, and saute the onion and green pepper.
  • Preheat oven on broiler setting.
  • Divide the meat between the bottoms of 4 rolls, layer with onion and green pepper, then top with sliced cheese. Place on cookie sheet, and broil until cheese is melted. Cover with tops of rolls, and serve.

1 cup Guinness beer, or other stout
1/2 cup finely chopped sweet onion
1/3 cup reduced-sodium soy sauce
2 tablespoons molasses, (not blackstrap)
1 tablespoon chopped fresh rosemary, or 1 teaspoon dried
1 tablespoon minced garlic
1/4 teaspoon Worcestershire sauce
1 pound boneless bison rib-eye steaks, 1 1/2-2 inches thick (see Tip)
24 cremini mushrooms, stems removed
1 large red onion, cut into 1/4-inch-thick slices
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
Freshly ground pepper, to taste
4 slices rye bread, 1/2-3/4 inch thick

Steps:

  • Combine beer, sweet onion, soy sauce, molasses, rosemary, garlic and Worcestershire sauce in a large sealable plastic bag. Add steaks. Seal the bag, shake and turn it, and refrigerate, flipping over and shaking the bag from time to time, for 12 to 18 hours. Preheat a grill to medium. Remove the steaks from the marinade and pat dry. Reserve 1 cup marinade (discard the rest). Brush mushroom caps and onion slices with oil, sprinkle with salt and pepper and place in a grilling basket. (No grill basket? See Tip, below.) Place the basket on the grill; place the steaks directly on the grill rack. Grill the steaks and vegetables until browned on the first side, 5 to 7 minutes. Turn everything over and grill until an instant-read thermometer inserted into the center of the steak registers 125°F for medium-rare and the vegetables are soft and lightly browned, about 5 minutes more. Remove from the grill and let rest for 5 to 10 minutes. Lightly grill or toast the bread. Meanwhile, place the reserved 1 cup marinade in a small saucepan and bring to a simmer over medium-high heat.
